Egg Salad Sandwiches are one of our go-to weekday lunches. I came across this Lunch Lady Egg Salad Sandwich recipe in my government school cafeteria cookbook and couldn’t resist giving it a try. Hard boiled eggs, onion, celery, salt, pepper, dry mustard, mayonnaise, and sweet pickle relish. SO simple and packed full of amazing flavor. We love the little crunch from the chopped celery! How to Make Lunch Lady Egg Salad Sandwich
These sandwiches are super easy to make with only a few simple ingredients. Peel hard-boiled eggs and finely chop. In a medium bowl, gently combine chopped eggs, onions, chopped celery, black pepper, salt, dry mustard, mayo, and sweet pickle relish until well blended. Toast bread slices. Top slices of bread with the egg salad mixture. Add lettuce and a tomato slice and enjoy!

This has quickly become our go-to egg salad recipe. I always have the ingredients on hand to whip up a batch at a moment’s notice. You can serve the egg salad on bread, toast, with crackers, or in a tortilla wrap. We usually top the sandwiches with some lettuce and tomato. It is also delicious with some bacon and sliced avocado. YUM! This is great for breakfast, lunch, and dinner!! You must give this a try ASAP!

- 1 Tbsp dried minced onion flakes
- ¾ cup chopped celery
- ¼ tsp black pepper
- ¼ tsp dry mustard
- ¼ tsp salt
