Mexican food is my guilty pleasure. I could it eat every day and never get tired of it. This Margarita Chicken recipe is one of my favorite Mexican recipes. It is a little smoky and a little tangy and a whole lot of deliciousness! The best part about this recipe is that there are only four ingredients. Chicken, margarita mix, Rotel diced tomatoes and green chiles, and taco seasoning. Super simple to make and it packs SO much flavor!
This recipe was inspired by Chili’s restaurant. Their Margarita Grilled Chicken is my favorite thing to order, so I decided to make a copycat recipe so I can have it at home anytime I want! We have been making this at least once a month. The chicken is great as a main dish or chopped up for chicken tacos. YUM! This delicious recipe a try ASAP! It is sure to become a family favorite!
How To Make Margarita Grilled Chicken at Home
This chicken is effortless to make with only a few simple ingredients. In a large bowl, whisk together margarita mix, taco seasoning, and Rotel diced tomatoes and green chiles. Place chicken in a plastic bag. Pour marinade over chicken and seal bag. Refrigerate the chicken for a few hours to overnight. When ready to cook the chicken, remove the chicken from the marinade and discard. Cook the chicken on the grill until it reaches an internal temperature of 165ºF. Garnish the chicken with fresh pico de Gallo and enjoy!

Place on a rimmed baking sheet or baking dish. Bake at 400ºF for 10 minutes, until it reaches an internal temperature of 165ºF.

- 1 (10-oz) can frozen margarita mix, thawed
- 1 (1-oz) package taco seasoning
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- 6 boneless skinless chicken breast halves
Instructions:
- Whisk together margarita mix, taco seasoning, and Rotel. Pour over chicken and marinate at least 2 hours.
- Prepare grill and remove chicken from marinade. Grill approximately 12 to 15 minutes, until no longer pink and reaches an internal temperature of 165ºF.
