Copycat Chili’s Margarita Chicken

Mexican food is my guilty pleasure. I could it eat every day and never get tired of it. This Margarita Chicken recipe is one of my favorite Mexican recipes. It is a little smoky and a little tangy and a whole lot of deliciousness! The best part about this recipe is that there are only four ingredients. Chicken, margarita mix, Rotel diced tomatoes and green chiles, and taco seasoning. Super simple to make and it packs SO much flavor!

This recipe was inspired by Chili’s restaurant. Their Margarita Grilled Chicken is my favorite thing to order, so I decided to make a copycat recipe so I can have it at home anytime I want! We have been making this at least once a month. The chicken is great as a main dish or chopped up for chicken tacos. YUM! This delicious recipe a try ASAP! It is sure to become a family favorite!

How To Make Margarita Grilled Chicken at Home

This chicken is effortless to make with only a few simple ingredients. In a large bowl, whisk together margarita mix, taco seasoning, and Rotel diced tomatoes and green chiles. Place chicken in a plastic bag. Pour marinade over chicken and seal bag. Refrigerate the chicken for a few hours to overnight. When ready to cook the chicken, remove the chicken from the marinade and discard. Cook the chicken on the grill until it reaches an internal temperature of 165ºF. Garnish the chicken with fresh pico de Gallo and enjoy!

  • Does Margarita Grilled Chicken Have Alcohol? No! This Margarita Grilled Chicken doesn’t contain any alcohol. It uses margarita mix. The margarita mix does not contain any alcohol.
    • You can use frozen margarita mix or bottled margarita mix.
    • If you can’t find margarita mix, you can substitute a can of frozen limeade concentrate.

  • You can use this marinade on any chicken pieces – breasts, tenders, thighs, wings, or drumsticks/legs.
  • You can use boneless or bone-in chicken. Cook until a meat thermometer registers an internal temperature of 165ºF.
  • I suggest pounding the chicken breast to an even thickness. We put the chicken in a ziplock bag and use a flat meat mallet to carefully pound out the hump. This ensures that the chicken cooks evenly and you don’t have juicy chicken and half-dry chicken.
  • I don’t have a grill. Can I cook the chicken breasts in the oven or skillet? Yes! To cook the chicken breasts inside, pan-sear it in a skillet or grill pan for 3 to 4 minutes per side. Place on a rimmed baking sheet or baking dish. Bake at 400ºF for 10 minutes, until it reaches an internal temperature of 165ºF.
  • Store leftovers in an airtight container in the refrigerator.

Margarita Grilled Chicken recipe – copycat Chili’s Margarita Grilled Chicken – the BEST chicken! Only 4 ingredients including the chicken! Ingredients:

  • 1 (10-oz) can frozen margarita mix, thawed
  • 1 (1-oz) package taco seasoning
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
  • 6 boneless skinless chicken breast halves

Instructions:

  • Whisk together margarita mix, taco seasoning, and Rotel. Pour over chicken and marinate at least 2 hours.
