Sheet Pan Mexican Pizza

This Mexican Chicken Pizza combines two of my all-time favorite foods – pizza and tacos! This recipe is the perfect combination of both flavors! Pizza dough topped with a creamy cheese sauce, grilled chicken, black beans, corn, cheese, and salsa. This is SO easy to make and it tastes great! Whip up some Mexican rice and refried beans and you are set! The whole family gobbled this up. Taco Tuesday has never tasted so delicious!

How to Make Mexican Chicken Pizza

This pizza is super easy to make with only a few simple ingredients. In a small saucepan, combine cream cheese, taco seasoning, and shredded cheese. Cook over medium-low heat until smooth and the cheese has melted. Set aside.

Unroll a can of pizza dough and press into the bottom and up the sides of a 15×10 baking sheet that has been sprayed with nonstick cooking spray. Bake in a preheated oven for 5 minutes. 

Spread cheese sauce over partially baked pizza crust. Top with grilled chicken, black beans, corn, and shredded cheese. Drizzle salsa and salsa verde over the top of the pizza. Bake in a preheated oven until the crust is golden and the cheese is melted. Sprinkle with cilantro or parsley.

Ingredients:

  • 1 (13.8-oz) can refrigerated Classic Pizza Dough
  • 6 -oz cream cheese
  • 1 Tbsp taco seasoning
  • 2 cups shredded Mexican cheese blend divided
  • 2 cups grilled chicken strips
  • ¼ cup corn kernels
  • ¼ cup black beans, drained and rinsed
  • ¼ cup salsa
  • ¼ cup salsa verde

Instructions:

  • Preheat oven to 400ºF. Lightly spray a 15×10-inch pan with cooking spray.
  • Unroll pizza dough and press in the bottom and up sides of the prepared pan. Bake for 5 minutes.
  •  In a small saucepan, combine cream cheese, taco seasoning, and shredded cheese. Cook over medium-low heat until smooth and the cheese has melted. Remove from heat.
  • Spread over cheese sauce over the pizza crust. Top with grilled chicken, corn, black beans, and shredded cheese. Drizzle salsa and salsa verde over the top of the pizza.
  • Bake for 15 to 18 minutes, until crust is golden brown and cheese is melted.
  • Top with favorite taco toppings, if desired.

Notes:

    • I used a can of refrigerated pizza dough. I used the regular pizza dough, not the thin crust.
    • I use frozen grilled chicken breast strips.
      • You can use any cooked chicken you have on hand. Chicken breasts, chicken thighs, chicken tenderloins, and rotisserie chicken all work fine.

    • I use bag of Mexican cheese blend in this recipe. You can use flavor of cheese you enjoy. Monterey Jack cheese, Pepper Jack cheese, or sharp cheddar cheese works great.
    • Feel free to add onions, bell peppers, olives, jalapeños, or tomatoes to the toppings.
    • Store leftovers in an airtight container in the refrigerator.
