Easy Weeknight Dinner

Chicken casseroles are a weeknight staple at our house. I am always thinking of ways to change them up so we don’t get bored with the same old thing. This Million Dollar Chicken Casserole is a kicked-up version of the classic Chicken Poppy Seed Casserole I ate growing up with cream cheese, cottage cheese, and sour cream. This casserole is super simple to make and tastes like a million bucks! Serve the casserole with some green beans and crusty bread and dinner is done!!

How to Make Million Dollar Chicken Casserole

This chicken casserole is super easy to make. Start with a rotisserie chicken. Remove the skin and pull the meat off the bones. Next simply combine the chicken, cottage cheese, cream cheese, sour cream, cream of chicken soup, garlic powder, and onion powder. Spread the chicken mixture into a baking dish, top with crushed Ritz crackers and bake. 

Can this Casserole be Frozen?

This Million Dollar Chicken Casserole makes a great make-ahead meal and freezer meal. I usually double the recipe when I make this. I bake one and freeze one for later. You can freeze the casserole baked or unbaked. To bake the casserole after freezing, thaw overnight in the refrigerator and bake as directed below. To reheat the casserole after freezing, thaw overnight in the refrigerator. Cover the casserole with foil and bake at 350ºF for 30 to 40 minutes.

  • cups chopped cooked chicken
  • 4- oz cream cheese, room temperature
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.75-oz) can cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 Tbsp butter, melted


  • Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
  • Combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Spread into prepared pan.
  • Combine crushed crackers and butter, sprinkle over chicken mixture..
  • Bake uncovered 30 to 40 minutes.


  • Use a rotisserie chicken for quick prep of the cooked chicken.
  • You want the cream cheese to be very soft so it gets fully incorporated into the casserole. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
  • Can prepare through step 3 and refrigerate or freeze for later.
  • To bake after freezing, thaw completely and bake as directed above.
  • For a gluten-free dish, use gluten-free Cream of Chicken soup and crushed pork rinds instead of Ritz crackers.

  1. I have made this recipe twice. Both times, I doubled the recipe. I used Panko bread crumbs bc I didn’t have any Ritz crackers on hand. I also added some left over veggies, like broccoli and carrots, and used canned chicken, along with rotisserie chicken, and no one even knew. Sure, they saw the veggies in there and thought it was a great touch. I also used both—a can of cream of mushroom soup and a can of chicken soup, and it was good. And I used at least a teaspoon of each, garlic and onion, in the casserole, and my nephew decided to sprinkle more on top before the bread crumbs were put on, just across the entire casserole. Then I put the bread crumbs on top and cooked it. It came out great both times. The first time, my sister said to make it over Christmas, and I did. At Christmas, my 2 little nieces, age 6 and 7, asked for seconds. Now you know it’s good if kids like it!

  3. I made this for my daughter and son in law upon the birth of their baby. I made a bunch of freezable meals for them. I added chopped broccoli and I used garden vegetable cream cheese and everything Ritz crackers. They really liked it.

  4. This looks delicious. What if you used cut up chicken cutlets, raw? How much longer would it need to bake? Would that longer time make the other ingredients too dry? Add extra liquid to compensate?

    1. It would still be the same amount – just add more chicken next time until it reaches your preferred amount.

      1. Does the cream cheese need to be mixed in completely ? Or is it assembled in chunks? I watched the video, and I am still confused.

        1. I mixed the cream cheese in completely, but you can have some small chunks if you prefer.

  7. I absolutely loved this recipe! It was perfect for what I was trying to do which was make a casserole to bring to a potluck. It was quick it was easy and it actually surprised me a lot because I’m not a huge fan of cottage cheese but it’s a texture thing so in this recipe was completely fine.

        I didn’t have cottage cheese so I used more sour cream and heavy whipping cream to make up the 1 C.

        It was delicious but I think next time I will make more crumbs on top.

      2. I couldn’t really taste the cottage cheese specifically, but you don’t have to use it. Just add extra cream cheese. This is a recipe you can make it however you like. Add veggies, extra chicken or other cheeses or more veggies😊 Maybe even a little cream?
        I definitely used precooked chicken. Made for a quick delicious meal😋🐔🧀🐓🥰
        I pretty much don’t even measure ingredients with this recipe I just add what I like😜

      3. I didn’t have cottage cheese on hand so I looked up “Substitute for cottage cheese” on Google.

        I ended up using ½ C more sour cream and ½ C heavy whipping cream.

        It was delicious!

        I didn’t have a 9″x9″ pan handy and I used a different size. It could have used more topping on it but that might be because of the pan.

    1. I sprinkled it with dried parsley after it baked. It is just for color in the photos. It isn’t necessary.

  9. My family loved this dish and each had 2 helpings. I put it over egg noodles and made a veggie side. The only negative is the sauce was a little thick. I think next time I will use raw chicken and cook it longer so the chicken juice can help thin the sauce a little. 30 minutes without the cracker crumbs then 30-40 minutes with the crumbs on top.

  10. This is very much like poppy seed chicken. You would only have to put a generous amount of poppy seeds on top of the chicken and sprinkle more on top of the Ritz cracker topping. A word of warning about calling something gluten free by replacing the topping. There is gluten in the soup and gluten in the rotisserie chicken. Gluten isn’t just found in crackers and bread and biscuits and cake. It is in so many other unsuspected foods and condiments. Truly going gluten free is major hassle and not one that most people who think they are gluten free would ever attempt. This is a shout out to all the people who have Celiac disease.

    1. You could use GF condensed chicken soup and GF crackers. Obviously make sure the spices are GF too. This is so easy to make for my celiac people! Also it’s delicious!

  11. Followed the recipe exactly as written and it turned out more liquidy than expected. Any suggestions? Other than that, it tasted wonderful….even my 5 and 4yo ate it!

    1. Maybe drain the cottage cheese some or try a different brand? I’m not sure what would have made it too liquidy.

    2. I added sautéed onions and celery to mine. Also added 1/4 mayonnaise. Used Panko crumbs. It was delicious. Definitely will make this recipe again. Thanks!

    1. I’m really disappointed that there was no reply to any of the sub cottage cheese questions. I hate cottage cheese but really want to make this without wasting ingredients if the cottage cheese taste is too much for me. Any suggestions??

      1. Any changes and substitutions to the recipe are completely up to you. I do not know you and do not know what you like to eat. This is how I made the recipe and we enjoyed it. I do not eat cottage cheese out of the container, but I enjoy it in baked casseroles. I have not tested this recipe with any other ingredients.

      2. What substitutions did you already try? Several comments here said they doubled the cream cheese. Cooking is all about experimenting with flavors! Have fun with it

        1. Check it at the time listed to see if it is warm and bubbly, If not, bake it 10 to 15 minutes longer.

  12. I just made this for the 2nd time! It is so good. I didn’t have any creamed soup so I had to improvise. I used jarred chicken gravy and some tiny cubed celery and carrots softened by heating in chicken stock to the mix. We enjoyed it too!

  17. Great-tasting and easy comfort food dish! Made some changes so for those wondering…
    ~ I used 1 c. ricotta instead of 1 c. cottage cheese, and it turned out great!
    ~ I also used 1/2 tsp each garlic powder and onion powder (twice as much of both), but that’s just personal preference.
    ~ I used cream of celery soup instead of cream of chicken — again, personal preference, but it helps diversify the flavor just a bit).
    ~ Some suggested adding rice to the dish. I’m not sure it would work if you added *uncooked* rice — there’s not a lot of excess liquid for the rice too soak up — maybe you could add cooked rice? Not sure…

    Overall, will definitely make again as a quick yummy dinner option!

  18. I omitted the cottage cheese because the family doesn’t like it. I also added a can of Le Sueur very young small sweet peas. Also added 1/4 cup of shredded cheese on top for the last 5 minutes of baking. It was awesome.

  19. I made this last night and it was a hit! It has a different flavor that we aren’t used to, but it turned out being very delicious. We have enough leftovers that we will have it again tonight.   29. This is almost identical to the chicken casserole I grew up on (chicken poo casserole we called it) the only difference is – it did not call for cottage cheese.   36. Great combinations, I made this recipe just as written, tasting it before adding topping and baking. For our family’s taste preferences, it was a bit bland, so I bumped up the powdered garlic to 1 1/2 teaspoons…. that was just the ticket! Lovely, bubbly rich goodness. Served with wild rice and green beans.

    1. As long as you didn’t change the quantity of the ingredients the serving size wouldn’t change. I’m not sure what your definition of “heeping” is, but this should feed 6 regular people.

    1. I was thinking the same thing. I don’t like cottage cheese, not even in recipes. I was thinking about using 2/3 or 3/4 cups of skim ricotta. I normally use full fat ricotta in lasagna as I my family has noticed it doesn’t taste as rich if I don’t. But with all the cream based things in this, I think that wouldn’t matter as much.
