Easy Weeknight Chicken Casserole

Chicken Roll Ups are one of my all-time favorite meals. I have several versions on the blog. These Million Dollar Chicken Roll Ups just might be my favorite! Chicken and three types of cheeses wrapped in crescent rolls and topped with cream of chicken soup. YUM! I could literally eat the whole pan myself. I absolutely LOVE this dish!!

How to Make Million Dollar Chicken Roll Ups

This casserole is very easy to make. Start with combining cooked chicken, cottage cheese, sour cream, cream cheese, cheddar cheese, onion powder, and garlic powder. Separate crescent rolls into triangles. Scoop the chicken mixture on to the wide end of the triangle and roll up. Place the rolls in a baking dish and bake for a few minutes. Remove the dish from the oven. Whisk together cream of chicken soup and milk. Pour over the rolls and bake.

  • I used a rotisserie chicken for the cooked chicken in the casserole.
  • Here is our recipe for Slow Cooker Rotisserie Chicken: https://www.plainchicken.com/slow-cooker-rotisserie-chicken/
  • Can Chicken Roll Ups be made in advance? Yes. You can assemble the rolls ahead of time and refrigerate overnight. I prefer to prepare the chicken mixture the night before and assemble the rolls while the oven preheats. I think the rolls rise more in the oven when baked immediately after removing them from the can.
  • Can Chicken Roll Up be frozen? Yes! Bake the casserole and let it cool completely. Cover the baking dish with plastic wrap and foil and place in the freezer. The casserole will keep up to 3 months in the freezer.
    • To reheat the casserole after freezing, thaw, cover with foil and reheat in the oven at 350ºF until warm.

  • You want the cream cheese to be very soft so it gets fully incorporated into the chicken mixture. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
  • I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
