Monterey Chicken Roll Ups – heaven in a pan! The most requested chicken casserole in our house. Chicken, Monterey jack cheese, sour cream, spinach, and french fried onions wrapped in crescent rolls and topped with milk and cream of chicken soup. Use rotisserie chicken for quick prep! This is on the menu at least once a month! Everyone gobbles this up – we never have any leftovers.

Easy Chicken & Spinach Chicken Roll Ups

Chicken Roll Ups are a family favorite. I have several versions on the blog. These Monterey Jack Chicken Roll Ups are one of our favorites! Tons of amazing flavor with only a few simple ingredients. Chicken, sour cream, cheese, spinach, and french fried onions wrapped in crescent dough and topped with cream of chicken soup. Kids and adults gobble this up!

How to Make Monterey Chicken Roll Ups

This casserole is very easy to make with only a few simple ingredients. In a medium bowl, stir together shredded chicken, sour cream, garlic powder, onion powder, Monterey jack cheese, spinach, and french fried onions. Separate crescent roll dough into triangles. Scoop a spoonful of the chicken mixture onto the wide end of the triangle and roll up. Place the rolls in a baking dish and bake for a few minutes, until the rolls start to turn golden brown. Remove the dish from the oven. Whisk together the cream of chicken soup and milk or chicken broth in a shallow bowl. Pour sauce over the rolls and sprinkle with french fried onions. Bake until the casserole is bubbly. Garnish casserole with parsley.

Helpful Tips & Frequently Asked Questions

  • I use rotisserie chicken for the cooked chicken in the casserole. You can use any cooked chicken that you have on hand. Chicken breasts, chicken, things, chicken tenderloins, or canned chicken. This is a great recipe to use up leftover chicken.
  • Make sure to get as much of the water out of the frozen spinach as possible. I drain it in a colander and then squeeze it with a towel or paper towels until it is almost dry.
  • Feel to add some more veggies to the chicken mixture. Red bell pepper and sundried tomatoes are delicious.
  • You can use any can of cream of soup that you have on hand. Cream of chicken, cream of mushroom, and cream of celery all work great.
  • Feel free to substitute provolone cheese or mozzarella cheese.
  • Can Chicken Roll Ups be made in advance? Yes. You can assemble the rolls ahead of time and refrigerate them overnight. 
  • Can Chicken Roll Up be frozen? Yes! Bake the casserole and let it cool completely. Cover the baking dish with plastic wrap and foil and place in the freezer.
    • The casserole will keep for up to 3 months in the freezer.
    • To reheat the casserole after freezing, thaw, cover with aluminum foil, and reheat in the oven at 350ºF until warm or reheat in the microwave.
  • Store leftovers in an airtight container in the refrigerator.

Monterey Chicken Roll-Ups – heaven in a pan! The most requested chicken casserole in our house. Chicken, Monterey jack cheese, sour cream, spinach, and french fried onions wrapped in crescent rolls and topped with milk and cream of chicken soup. Use rotisserie chicken for quick prep! Ingredients:

  • 2 cups cooked chopped chicken
  • ½ cup sour cream
  • ½ (10-oz) package frozen spinach, thawed and drained
  • 2 cups shredded Monterey Jack cheese, divided
  • cup french fried onions, divided
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • ½ cup milk
  • 1 (8-oz) can refrigerated crescent rolls (8-count)
  • 1 (4-oz) can refrigerated crescent rolls (4-count)

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch dish with cooking spray.
  • Combine chopped chicken, sour cream, spinach, 1 cup cheese, and 1 cup fried onions. Feel free to add salt and pepper.
  • Separate crescent rolls into 12 triangles. Top the large part of the crescent triangles with the chicken mixture.
  • Roll the crescent rolls up and place in the bottom of the prepared dish.
  • Bake the rolls for 10 minutes. Remove baking dish from oven.
  • Mix together milk, and soup. Pour soup mixture over crescent rolls. Top with remaining cheese and french fried onions.
  • Return the baking dish to the oven and bake for 25 to 30 minutes or until bubbly.

  1. This may sound stupid but questions never are, how do you cut a crescent roll into a triangle, so you can roll up the chicken mixture, been sitting here thinking about this for a while, and I am a cook.
    Do you mean when you open them up, don’t roll them until after you fill them with chicken, this I do understand, this may be great with Hawaiian buns too, Thinking of leaving mine square and rolling them up that way.
