Mud Hen Bars (Gooey & Delicious)

Oh my heavens! These bars are incredible.  I could not stop eating them, and I am not a dessert person.  The bars have chocolate and marshmallows sandwiched between a cookie and crunchy brown sugar meringue layer.   I’ve had this recipe bookmarked in my Google Reader for years.  I can’t believe I waited so long to make them.  I have no idea what a “mud hen” is, but their bars taste really great.  I shared these with a friend, and she gave them two thumbs up!  They are super quick to put together, and would be great for the big game on Monday.

Mud Hen Bars
(Printable Recipe)

½ cup butter, room temperature
1 cup white sugar
3 eggs, divided (1 whole, 2 separated)
1 ½ cups flour
1 tsp baking powder
¼ tsp salt
1 tsp vanilla
½ cup semi-sweet chocolate chips
1 cup mini marshmallows
1 cup brown sugar

Preheat oven to 350 degrees.

Beat together the white sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put whites aside for later).  Mix in the flour, baking powder, salt, and vanilla.   Spread into a lightly greased 9×13-inch pan.

Sprinkle marshmallows and chocolate chips on top of the unbaked cookie crust.

Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread the meringue mixture over the marshmallows and chocolate chips.

Bake for 30 minutes.

Cool in pan and cut into squares.

  3. I just made these and took them out at the 30 minute mark. After letting them cool I cut into them and they're a gooey mess on the bottom. The crust didn't cook at all and now I think it's too late to put them back in as they've cooled already. I'm so disappointed.

  5. Oh my HAT!! I came across your blog purely by accident…a very happy accident BTW ๐Ÿ™‚ I wonder if this doesn't have anything to do with the baseball team Toledo Mud Hens? I am South African living in Cape Town and have never heard of a mud hen so googled it and read about the team. I like to think that it maybe was made by some dedicated mum or wife for the team or a bake sale for funds and the name stuck…I like the name and I love the sound of these. Am going to try them asap.   6. My family (back as far as my grandma) has made this recipe forever, without the marshmallows, just with chocolate chips – so now I'm dying to try it with marshmallows! We've always just called them Chocolate Chip Meringue Bars – Mud Hen Bars is such a better name!

  8. I actually made these already. I saw this this afternoon, verified I had everything at home, and made a batch. It's more like a cake on the bottom than a cookie (which is what I thought it would be for some reason), but yeah, they're GOOD.
