This quick Mushroom & Feta Orzo is a favorite at our house. It only has a few simple ingredients and tastes great. It is just as easy as pulling out a box of Rice-A-Roni but tastes a million times better. We make this several times a month and love it. Chicken Legs loves the mushrooms and I love the feta cheese. It is the best of both worlds for us!
How to Make Mushroom & Feta Orzo
This pasta is super easy to make. Start with melting some butter in a skillet and cooking the fresh mushroom slices until they start to soften. Add the orzo pasta and cook until it starts to get a golden brown color. Add garlic and chicken broth. Bring the pasta to a boil and simmer for 10 minutes, until soft. Stir in some crumbled feta cheese. Garnish the orzo with some dried parsley and serve immediately.
Feel free to add any other vegetables to the orzo mixture. Onions or bell peppers would be nice. You can even throw in some leftover chicken, pork, or beef and turn this into an easy main dish.

Mushroom & Feta Orzo
Ingredients:
- 3 Tbsp butter
- 8 -oz sliced fresh mushrooms
- 8 -oz orzo pasta, uncooked
- 2 cloves garlic minced
- 2 cups chicken broth
- ½ cup crumbled feta cheese
- salt and pepper, to taste
Instructions:
- Melt butter in a skillet over medium heat. Add mushrooms and orzo and cook until some of the orzo turns golden brown.
- Add garlic and cook for an additional one minute. Add chicken stock, bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes. Stirring occasionally.
- Remove from heat and stir in cheese, salt, and pepper. Garnish with dried parsley.

I just made this recipe and really liked it. I added a cup of frozen peas because I love mushrooms and peas together. But I thought the feta was too strong of a cheese for my liking, and next time I’ll add crumbled goat’s cheese instead. But it was certainly an easy and fast recipe. Thank you!
Such an easy and yummy recipe!
I used Danish feta which has a lovely mind flavour and is very creamy, it worked very well. In addition to the mushrooms I also added half an onion, some chopped baby tomatoes and a bunch of baby spinach. Such a great recipe to use up what’s in the fridge.
I made this recipe tonight and it was delicious! I added 1 cup or so of frozen chopped spinach as it seemed similar to a Greek dish I know of. Next time, we will increase the amount of feta to make it even more flavorful. We really enjoyed this and will be making it a lot! 8 ounces of orzo made a lot for another meal for the 2 of us as a side dish.
