Soup is a favorite at our house this time of year. I am always looking for new recipes. I was thrilled when a Plain Chicken reader sent this yummy Mushroom & Wild Rice Soup recipe to me. Chicken Legs is a HUGE mushroom fan, so I was excited to try this soup. OMG! SO easy and SOOOO good! It was ready from start to finish in about 20 minutes. Serve this with some crusty bread and dinner is done!
How to Make Mushroom & Wild Rice Soup
As I said, this Mushroom & Wild Rice Soup is SUPER easy to make. Start with cooking some onion and fresh mushrooms. Next, add some water, chicken broth, sherry, cream of mushroom soup, and a box of quick-cooking long grain and wild rice. Bring to a boil and simmer for 10 minutes. That is it! I told you this was easy to make.
I used a box of Uncle Ben’s quick-cooking Long Grain & Wild Rice Blend. You are just going to dump the seasoning packet and rice directly into the soup. Do no precook it. It will cook it directly in the pot with the rest of the ingredients.
Feel free to swap the chicken broth for vegetable broth to make this a vegetarian recipe. You can also use 98% Fat-Free or Healthy Choice Cream of Chicken Soup.
