Easy Mushroom & Wild Rice Soup

Soup is a favorite at our house this time of year. I am always looking for new recipes. I was thrilled when a Plain Chicken reader sent this yummy Mushroom & Wild Rice Soup recipe to me. Chicken Legs is a HUGE mushroom fan, so I was excited to try this soup. OMG! SO easy and SOOOO good! It was ready from start to finish in about 20 minutes. Serve this with some crusty bread and dinner is done!

How to Make Mushroom & Wild Rice Soup

As I said, this soup is SUPER easy to make. Start with cooking some onion and fresh mushrooms in a large stockpot or Dutch Oven. Next, add some water, chicken broth, sherry, cream of mushroom, and a box of quick-cooking long grain and wild rice. Bring to a boil and simmer for 10 minutes. That is it! I told you this was easy to make.

  • I used a box of Uncle Ben’s quick-cooking Long Grain & Wild Rice Blend. You are just going to dump the seasoning packet and rice directly into the soup.
  • Do not pre-cook the rice. It will cook it directly in the pot with the rest of the ingredients.
  • Can use any can of Cream of Soup you prefer – Cream of Mushroom, Cream of Celery, Cream of Chicken, or Cream of Broccoli all work great.
  • Feel free to use vegetable broth to make this a vegetarian recipe.

Equipment:

Ingredients:

  • 2 Tbsp. oil
  • ½ large onion chopped
  • 1 (8-oz) pkg sliced fresh mushrooms
  • 1 (14.5-oz) can fat-free chicken broth
  • 1 (10.5-oz) can Unsalted Cream of Mushroom Soup
  • cups water
  • 2 Tbsp cooking sherry
  • 1 (6.2-oz) box Fast Cook Uncle Bens long grain & wild rice blend

Instructions:

  • In a Dutch oven, heat oil. Add onion and mushrooms and cook until soft.
  • Add remaining ingredients and stir.
  • Bring to a boil. Reduce heat to simmer and cook 10 minutes.

  1. Well this was fabulous, but I wanted share my experience. I also made a few adjustments of which were epic fails, thought I’d share and save you the mishaps. I doubled the rice, not a good idea because then you have to start adjusting the liquid to compensate, oops. Then I decided to cook it in the Crockpot, again, oops, it just made it mushy, still great flavor though, we ate every bite. I did add chicken breast, not to much though, just so it had some sort of meat, that worked out well. My advice, follow Stephanie’s recipe to the letter, it will be perfect. Thank you Stephanie.

  2. I MADE THIS SOUP. MY HUSBAND SAID IT WAS THE BEST SOUP I'VE EVER MADE. I USED 2 BOXES OF UNCLE BENS RICE. I ADDED A CAN OF CREAM OF CHICKEN SOUP. I ALSO ADDED CELERY YELLOW BELL PEPPER GARLIC AND 2 BONELES SKINLESS CHICKEN BREAST. IT WAS ABSOLUTELY DELICIOUS. WE ATE A LARGE BOWL FOR DINNER SATURDAY AND SUNDAY NIGHT. I STILL HAVE SOME LEFT FOR TOMORROW. I WILL CHANGE UP WITH SOMETHING NEW TONIGHT.
