This Old School Cheesy Squash Casserole is a must at our holiday table. Everyone loves this easy make-ahead side dish! Not only is this casserole ridiculously good it is also ridiculously easy to make with NO cream of anything soup! It only has squash, onion, butter, eggs, sour cream, mayonnaise, cheddar, swiss, thyme, salt, pepper, crushed Ritz crackers, and parmesan.
How to Make Squash Casserole
This casserole is super easy to make. Start with cooking the squash and onion in a skillet until tender. Drain the squash for 5 minutes. After you have drained the squash, mix in sour cream, eggs, cheddar cheese, swiss cheese, mayonnaise, thyme, salt, and pepper. Spread the mixture into a baking dish and top with crushed Ritz crackers, parmesan cheese, and melted butter and bake.
You can make this casserole a day in advance and refrigerate it overnight. I think make-ahead recipes are a must for the holidays! Nobody wants to spend all day in the kitchen. You want to be able to spend time with your family and relax.
Tips for Making Cheesy Squash Casserole
The most important step in this recipe is to drain the onion and squash after cooking. You want to make sure as much of the liquid is removed before adding the rest of the ingredients. Squash is really watery. If you don’t let the squash really drain, it will make your casserole watery. Nobody wants to eat a watery casserole.
If you need a gluten-free/low-carb/keto-friendly dish, you can substitute crushed pork rinds for the Ritz Crackers.
For a vegetarian dish, look for an animal-free rennet Parmesan cheese such as Trader Joe’s grated parmesan cheese.

Cheesy Squash Casserole
Ingredients:
- 6 Tbsp butter, divided
- 3 lb yellow squash, sliced 1/4-inch thick
- 1 medium onion, chopped
- 2 tsp kosher salt divided
- 2 eggs, lightly beaten
- 1 (8-oz) container sour cream
- 1 cup shredded cheddar cheese
- ½ cup shredded Swiss cheese
- ½ cup mayonnaise
- ½ tsp dried thyme
- ½ tsp black pepper
- 2 sleeves Ritz crackers, crushed
- 1/4 cup grated parmesan cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray. Set aside.
- Melt 3 Tbsp butter in large skillet over medium-high heat. Add squash and onion and 1 tsp salt. Cook until squash is tender, about 10 minutes.
- Transfer squash mixture to a colander and drain for 5 minutes. Discard any liquid.
- Mix together eggs, sour cream, cheddar cheese, Swiss cheese, mayonnaise, thyme, remaining 1 tsp salt and pepper. Add cooked squash mixture.
- Pour squash mixture into prepared pan.
- Melt remaining 3 Tbsp butter. Combine crushed Ritz crackers, melted butter and parmesan cheese. Sprinkle over casserole.
- Bake uncovered for 20 minutes.

I don’t have ritz crackers so I substituted crispy fried onions omg so good
Excellent casserole! Easy to make and freezes beautifully. The second time I made it I added a small jar of pimento. Great!!
