I have a serious weakness for Mexican food, especially chicken fajitas. I could eat chicken fajitas every day. We normally grill our fajitas. I baked the fajitas this time because I wanted fajitas and didn’t marinate any chicken. I tossed the chicken and veggies with some fajita seasoning and thew everything in the oven. OMG! They turned out great. I absolutely loved the flavor!
This was SO simple to make. You could even toss everything together the night before and refrigerate it until you got home from work. I think this would be a great freezer meal too. Toss everything into a gallon freezer bag and pull it out when you are ready to bake. Either way, you must make these. Serve the fajitas with some black beans and rice for a midweek fiesta!
Oven Baked Chicken Fajitas
serves 4

- 1 lb chicken tenders
- ½ cup salsa
- 1 green pepper, sliced
- 1 onion, sliced
- 1 cup sliced mushrooms
- 1 packet fajita seasoning or homemade fajita seasoning (below)
- tortillas
- sour cream
- cheese
- additional salsa
- Homemade Fajita Seasoning
- 1 Tbsp cornstarch
- 2 tsp chili powder
- ½ tsp salt
- 1 tsp smoked paprika
- 1 tsp sugar
- ¾ tsp chicken bouillon
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp cayenne pepper
- ¼ tsp cumin
Preheat oven to 400.
In a small bowl, whisk together homemade fajita seasoning ingredients.
In a large bowl. combine chicken, onion, pepper, salsa, mushrooms and fajita seasoning. Stir to coat. Pour mixture into a greased 9×13-inch pan.
Bake 20 minutes. Serve chicken and vegetables on tortillas. Top with sour cream, cheese and additional salsa if desired.
This has become a staple in our house now. When I remember in the morning I will marinate the first 6 items in a plastic bag all day, I add the juice of a big lemon and a couple limes. But it is still great if I throw it together and pop it in the oven. Have made this probably 8 times in the last three months. Great recipe!!
Regarding the cheese: should it be included with the other ingredients and set to bake or added after food is done. How much cheese should be used? This looks so delicious!

Can this work with already cooked and shredded chicken? Just mix all the ingredients as is and place in the oven?
