Breakfast casseroles are a favorite at our house, especially make-ahead overnight breakfast casseroles! Nobody wants to wake up and have to make breakfast. At least I don’t! This Overnight Bacon Breakfast Casserole is perfect for a hectic weekday or lazy weekday morning. Assemble the casserole before bed and pop it in the oven when you wake up. Chop some fruit, whip up some grits and breakfast is done!
How to Make Bacon Breakfast Casserole with Bread
This Overnight Bacon Breakfast Casserole is very easy to make. Start with some Sunbeam bread slices. Place them in the bottom of a casserole dish. Next add bacon, cheese, and green onions. Whisk together eggs, half-and-half, salt, and pepper. Pour half of the egg mixture over bread. Repeat layers. Top casserole with shredded parmesan cheese. Cover the casserole with plastic wrap and refrigerate overnight. Bake the casserole the next morning.
If you want to take a shortcut and use precooked bacon, you will need about 2 cups of chopped cooked bacon. I buy bags of precooked chopped bacon at Sam’s Club and Costco. It makes a fantastic shortcut for casseroles like this.
Can Bacon Breakfast Casserole be Frozen?
You can freeze this Overnight Bacon Breakfast Casserole for later. You can freeze the casserole baked or unbaked. To freeze the unbaked casserole, prepare as directed and place in the freezer instead of refrigerating. When ready to bake, thaw completely in the refrigerator and bake as directed below. To reheat the baked casserole, thaw completely in the refrigerator overnight. Cover with foil and bake at 350ºF for 30 to 40 minutes.

Overnight Bacon Breakfast Casserole
Equipment:
Ingredients:
- 12 slices white bread Sunbeam
- 2 lbs bacon, cooked
- 1 bunch green onions, sliced
- 3 cups shredded cheddar cheese
- 1 dozen large eggs
- 4 cups half-and-half
- 1 tsp salt
- 1 tsp white pepper
- 1/2 cup shredded Parmesan cheese
Instructions:
- Lightly spray a 9×13-inch baking dish with cooking spray.
- Line the bottom of the baking dish with 6 slices of bread. Crumble half of the bacon over the bread. Sprinkle half the sliced onions and half of the cheddar cheese over the bacon.
- Whisk together eggs, half-and-half, salt, and pepper. Pour half over the bread-cheese layers.
- Repeat the layers with remaining bread, bacon, green onions, and cheddar cheese. Pour remaining egg mixture over bread. Top with parmesan cheese.
- Cover casserole and refrigerate overnight.
- Preheat oven to 325ºF. Remove casserole from refrigerator and bring to room temperature.
- Bake uncovered for 50 to 55 minutes, or until set.
