You make the casserole the night before and bake it the next morning. It is perfect for hectic holiday mornings and overnight guests. You can even make this ahead of time and serve it for dinner. We love breakfast for dinner at our house!
This casserole is super easy to make. It starts with a bag of frozen hash browns. Add cheese, ham, green onions, eggs, evaporated milk, salt, and pepper. Pour the mixture into a baking dish and refrigerate overnight. You could even add some bell pepper and mushrooms. There is no need to thaw the hash browns before assembling the casserole. They will thaw overnight in the refrigerator.
This breakfast casserole was a huge hit at our house. We loved all the flavors in the casserole. Chicken Legs is still talking about how good this was. We ate this for dinner, but it is perfect for overnight guests, brunch, or early football games. I’m planning on making this for Thanksgiving morning. It is the perfect holiday morning casserole!

Overnight Ham and Cheese Hash Brown Breakfast Casserole
Ingredients:
- 1 (32-oz) bag frozen shredded hash brown potatoes
- 2 cups shredded cheddar cheese
- 2 cups cooked ham, diced
- ¼ cup chopped green onions
- 4 eggs, beaten
- 1 (12-oz) can evaporated milk
- 1/4 tsp ground black pepper
- 1/8 tsp salt, or to taste
Instructions:
- Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- Mix together hash browns, ham, green onions and cheese. Spread into prepared pan.
- Whisk together eggs, evaporated milk, pepper, and salt. Pour the egg mixture over the potato mixture in pan. Cover and refrigerate overnight. (You can also bake immediately)
- Preheat oven to 350ºF. Bake casserole for 55 to 60 minutes, until set.

Can you use the home style hash brown potatoes in place of shredded?
Can you use regular milk in place of the evaporated milk?

This is the best overnight b’fast casserole I have ever tried! I used a little frozen spinach (for the green) because I didn’t have spring onions but used regular yellow onion in place of those. Also tossed in a bit of finely diced red pepper. Everyone loved it and the couple small pieces left over were better yet for breakfast the next day. A KEEPER!
Used small can of diced chilies instead of onion. It was delicious@
Wondering if you bake this covered with foil ??? I’ve made this before and everyone loved it but can’t remember if I covered it when I baked it.

I prepared this the night before and popped it in the oven Christmas morning. It was so easy to do and was really delicious with fresh blueberries and raspberries and Starbuck’s dark roast coffee. Will make it again. 😋😋😋😋😋 #plainchicken

Hi Jenny! She doesn't list the hash browns as thawed in the ingredients or instructions, and since this cooks for almost an hour, I'm going to go with no. You throw them in frozen. That's my guess. And oh my does this look amazing!
