Parmesan Home Fries – cut potatoes tossed in breadcrumbs, parmesan and garlic – baked, not fried!
These home fries are a great alternative to frozen french fries. I especially like them because they are baked and not fried. The key to making them good and crispy is to arrange them on a baking sheet in a single layer without touching one another. This recipe is great to have the kids help out. They can measure out all the seasonings for the Parmesan coating and help coat the cut potatoes. If you want to prep these ahead of time, you can cut the potatoes up and let them soak in the water overnight.

Parmesan Home Fries

ingredients:

6 small baking potatoes

4 cups cold water

1 tsp salt

¾ cup butter, melted

1 cup breadcrumbs

1 cup grated Parmesan cheese

½ tsp salt
-
2 tsp dried parsley
-
½ tsp paprika
-
½ tsp garlic powder
- ¼ tsp black pepper
instructions:

Scrub potatoes. Cut lengthwise into 1/2-inch sticks. Place cut potatoes into a large bowl. Cover with water and 1 teaspoon of salt. Let stand 15 minutes.

Preheat oven to 400ĀŗF.

Drain potatoes and pat dry with paper towels.

Combine breadcrumbs, parmesan cheese, ½ tsp salt, parsley, paprika, garlic and black pepper. Set aside.

Dip potato sticks into melted butter; roll in parmesan mixture. Place in a single layer on a baking sheet. Lightly spray with cooking spray.
- Bake 20 minutes; turn potatoes and bake an additional 20 minutes or until golden brown.
