I usually double the recipe and they are always gone in a flash! This recipe comes together in a flash and is ready to eat in under 20 minutes. This recipe is different than most pecan tart recipes. There is no pie crust in this recipe. The crust is made with mini phyllo dough shells. I actually like these pecan tartlets better than regular pecan pie. I love the crispy phyllo crust!!
How to Make Mini Pecan Pie Tarts
These mini pecan bites are effortless to make with only a few simple ingredients. In a medium bowl, whisk together light corn syrup, egg, vanilla extract, salt, and sugar. Fold in chopped pecans. Spoon pecan filling into mini phyllo tart shells. Place filled shells on a baking pan and bake in a preheated oven for 15 minutes. Remove the pan from the oven and cool tarts on a wire rack.

- 1 Tbsp butter melted
- ⅓ cup light Karo syrup (can use dark)
- ⅓ cup sugar
- 1 tsp vanilla
- 1 cup chopped pecans
- 3 (15-count) boxes mini phyllo tarts
Instructions:
- Preheat oven to 350ºF.
- In a medium bowl, whisk together egg, butter, syrup, sugar and vanilla. Stir in pecans.
- Spoon pie filling into tart shells and place on a baking sheet.
- Bake for 15-18 minutes.
