How to Make Pimento Cheese Bacon Crackers

These crackers are super easy to make with only 3 simple ingredients. Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Set aside. Cut a package of bacon in half. Set aside. Spread pimento cheese onto the center of each cracker, top the crackers with another cracker, and wrap in half a piece of bacon. Place wrapped crackers on the prepared pan. Bake in a preheated oven until the bacon is crispy. Sprinkle crackers with dried parsley and enjoy.

Helpful Tips & Frequently Asked Questions

  • I use Club Crackers. Any buttery cracker will work fine. Townhouse crackers are a good substitute.
  • Baking the crackers on a baking rack/cooling rack on top of a rimmed baking sheet will keep the crackers from getting soggy from all the bacon fat. The bacon will cook and the bacon fat will drop down into the pan below.
  • For best results, use regular sliced bacon and not thick cut bacon slices. It will take longer for the thick-cut bacon to cook.
  • For crisper crackers and bacon, pop the crackers under the broiler for a few minutes at the end of the baking time.
  • Here is our recipe for Homemade Pimento Cheesehttps://www.plainchicken.com/the-masters-pimento-cheese/
  • Add a dash of cayenne pepper to add a little spiciness to the crackers.
  • Sprinkle the wrapped crackers with some brown sugar for a little sweetness.
  • You can assemble the crackers in advance and store in the fridge until ready to bake. Makes for an easy appetizer!
  • Can I freeze Crack Bacon Crackers? Yes. Cook the crackers and let them cool completely. Place the crackers in a freezer-safe bag. Freeze them for up to a month.
    • To reheat: remove the crackers from the freezer and let them thaw in the bag. Place them in a single layer on a baking sheet and cook for about 15-20 minutes at 250°F.
  • Store leftovers in an airtight container in the refrigerator.

Comments

  1. Oh my stars! These are delicious. The only change I made was to use lower sodium bacon and I don’t think that adversely affected the outcome.

  2. Sounds wonderful but do you think you could use the precooked bacon the same way to cut down on baking time?
    Can’t wait to try them!
