I won’t tell you how many of these crackers I made when I tested out this recipe. I ended up eating them as my lunch that day. SO good! They make a great party appetizer or afternoon snack. You must give this recipe a try ASAP!
How to Make Pimento Cheese Bacon Crackers
These crackers are super easy to make with only 3 simple ingredients. Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Set aside. Cut a package of bacon in half. Set aside. Spread pimento cheese onto the center of each cracker, top the crackers with another cracker, and wrap in half a piece of bacon. Place wrapped crackers on the prepared pan. Bake in a preheated oven until the bacon is crispy. Sprinkle crackers with dried parsley and enjoy.

- I use Club Crackers. Any buttery cracker will work fine. Townhouse crackers are a good substitute.
- Baking the crackers on a baking rack/cooling rack on top of a rimmed baking sheet will keep the crackers from getting soggy from all the bacon fat. The bacon will cook and the bacon fat will drop down into the pan below.

Pimento Cheese Bacon Crackers
Ingredients:
- 68 Club Crackers
- 1 (12-oz) container pimento cheese spread
- 1 pound bacon cut in half (17 slices cut in half)
Instructions:
- Preheat oven to 250ºF. Line a rimmed baking sheet with foil and place a cooling rack on top.
- Spread pimento cheese on top of half of the crackers. Top pimento cheese with the remaining crackers to make a sandwich.
- Wrap each cracker in half of a piece of bacon and place it on the rack.
- Bake for 2 hours or until bacon is crispy.
