Stop what you are doing and add these Pimento Cheese Grits with Bacon to your menu. OMG! SO creamy and loaded with flavor. Even if you think you don’t like grits, you will LOVE this casserole. They are to-die-for delicious. We had this for lunch last week and couldn’t get enough of them. We managed to save some for leftovers the next day with breakfast. They are equally delicious reheated. I already have this casserole back on the menu this weekend. YUM!
How to Make Grits Casserole
This casserole is very easy to make. Start with cooking the grits. I use quick cook grits – NOT instant grits. Once the grits are cooked, stir in some pimento cheese, milk, eggs, salt, pepper, and cooked bacon. Spread the mixture into a baking dish and top with some shredded cheese. Pop it in the oven and bake. Garnish the baked casserole with some green onions before serving.
I used Palmetto Cheese pimento cheese. It is hands-down the best store-bought pimento cheese. It tastes just like homemade. I highly suggest it. If you can’t find Palmetto Cheese, just use your favorite brand. I am sure it will taste just as good!

Pimento Cheese Grits Casserole
Ingredients:
- 3 cups chicken stock
- 1 cups quick-cooking grits
- 1 (12-oz) container pimento cheese
- ¼ cup butter, cubed
- ¼ cup milk
- 2 large eggs, lightly beaten
- ⅓ cup chopped cooked bacon
- salt and pepper, to taste
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven to 350° F. Lightly spray a 9-inch baking dish with cooking spray. Set aside.
- In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.
- Add pimento cheese and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Season with salt and pepper. Stir in cooked bacon.
- Transfer grits to prepared dish. Sprinkle with shredded cheese.
- Bake, uncovered, 30 to 35 minutes. Garnish with green onions.

I’m thinking about adding strained Rotel along with the Pimento Cheese. Anyone tried this? BTW, i plan to add the strined rotel liquid to the grits liquid.

I don’t like store bought pimiento cheese. Do you think just adding pimientos and cheese would work. Do you think mayo would be needed (as this is what I use with freshly grated cheddar)?
Any changes and substitutions to the recipe would be up to you.
I’m thinking of making this in individual muffin tins for a Derby Party. Do you think that’s a good idea?
I’ve never made this in muffin tins, so I can not say. The grits are not firm, so I don’t know if they will come out of the pan or not.
I’ve only recently become a grits lover . . .(grits with cheese that is). I found this recipe and decided to try it because I like grits with cheese and I really like Palmetto Pimento Cheese. Ommitted the bacon, but this casserole has been a hit every time I have made it. And each time, they want the recipe. So good.
