Easy Pimento Cheese Pasta Salad

Normally we would be kicking off Masters week. Due to the current situation, the Masters’ golf tournament isn’t being played this week. Well, that isn’t going to stop me from sharing some yummy spring/summer recipes like this Pimento Cheese Macaroni Salad. Pimento cheese is a classic Masters golf tournament snack. I have a copycat version on the blog that is AMAZING! I decided to turn my Masters Pimento Cheese recipe into a pasta salad. Two favorites combined into one delicious recipe! This pasta salad is super easy to make and tastes great. This macaroni salad is sure to become a staple at all your cookouts, potlucks, and picnics! 

How to Make Pimento Cheese Macaroni Salad

As I said, this macaroni salad is super easy to make. Start with boiling some elbow macaroni. While the cooked pasta is cooling off, stir together mayonnaise, garlic powder, green onions, salt, pepper, cheddar cheese, and diced pimentos. Stir in the cooled pasta and let it chill. 

This macaroni salad is best if you can let it chill at least 4 hours in the refrigerator. You can also make this a day in advance and let it sit in the fridge overnight. I love easy make-ahead side dishes like this!

What to Serve with Macaroni Salad

We serve this Pimento Cheese Macaroni Salad with just about everything. Burgers, chicken fingers, BBQ, grilled meats. It is such a versatile side dish. It has quickly become a favorite at our house.   • Cook pasta according to package directions. Drain and cool.
  • Combine cooled pasta with remaining ingredients in a large bowl.
  • Cover and chill before serving.

Just checking that the 8 oz of macaroni is correct as I’ve been perusing recipes for this dish online and most are using 1 lb macaroni with essentially the same amount of cheese and mayo as here. Yours is the only one that says it should be refrigerated and served chilled, which is what I wanted, so I just wanted to make sure I’m reading it correctly! Thanks much 🙂

    1. Delicious!! I have made this several times and love it so much. Not a big fan of celery so I cut it back by 50% but that’s the only change. Thank you for such simple and easy recipes which give such excellent results. I’m a fan!
