Delicious Pineapple Casserole

My first time having Pineapple Casserole was on a trip to the beach a few years ago. We had never heard of such a thing, much less eaten it. OMG! It is SO good! I knew I had to recreate the dish when we got home. I finally got around to making my own version and it was even better than the original. Pineapple chunks topped with flour, sugar, cheese, melted butter, and buttery Ritz crackers. I know this sounds like a strange dish, but I promise you will like it. Chicken Legs took one bite and loved it. He is still talking about how good the Pineapple Casserole was! We are definitely making this to go with our Easter ham this weekend. Give it a try. I promise you won’t be disappointed.

How To Make Pineapple Cheese Casserole

This casserole is super easy to make with only a few simple ingredients. Lightly spray a casserole dish with cooking spray. Drain canned pineapple chunks, reserving ½ cup of the juice. Place the drained pineapple chunks in the bottom of the prepared casserole dish. In a small bowl, combine all-purpose flour and sugar. Sprinkle flour mixture over pineapple. Drizzle with reserved pineapple juice. Sprinkle grated sharp cheddar cheese over the top of pineapple mixture. Sprinkle buttery cracker crumbs over cheese. Drizzle the casserole with melted butter. Bake until bubbly and golden brown.

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Drain the pineapple, reserving ½ cup of the juice. Place drained pineapple chunks in bottom of prepared dish. Combine flour and sugar and sprinkle over pineapple. Drizzle with reserved pineapple juice.
  • Sprinkle the cheese over the pineapple. Top with cracker crumbs. Drizzle casserole with butter.
  • Bake for 35 to 45 minutes, until bubbly and golden brown.

    1. My mom made this a lot. But no cheese. And it had bread I think instead of crackers. It was almost like a dessert but she always made it with ham.

  4. This is my go-to casserole for potlucks! Try tossing the cheese, flour and sugar with the chunks before topping with the crushed crackers. It gets the cheese and sugar mixed in with the pineapple. Great served with ham.

  5. The Pineapple Casserole does sound strange, but that recipe has been around for 15-20 years. Maybe it is a regional thing, but always gobbled up at potlucks, etc. Some recipes call for pineapple tidbits, but the chunks are the best.
