This Pineapple Coleslaw was also inspired by our meal at Pompano Joe’s in Destin. Both of our entrees were served with this slaw. I am not a slaw person, but Chicken Legs took one bite and loved it. He had no idea pineapple would be good in coleslaw! I promised to recreate it for him at home.
This only took a minute to whip together. The coleslaw was so delicious. It was even better the next day. Next time I will make it the day before I serve it. This would be great for your next cookout or potluck!
How to Make Pineapple Coleslaw
As I said, this is very easy to make. Whisk together mayonnaise, vinegar, and sugar. Stir in chopped pineapple and coleslaw mix. Mix well and serve.
- I used a bag of shredded coleslaw mix. Feel free to chop your own cabbage.
- For the pineapple, I drained a can of chopped pineapple and used 1 cup of the pineapple chunks. You can use fresh pineapple if you prefer.
- Can add a tablespoon of pineapple juice from the canned pineapple if you would like. Don’t add too much or the coleslaw will be runny.
- Feel free to toss in some toasted coconut or jalapeños to the coleslaw. SO good!
- Can coleslaw be made in advance? Yes! You can mix up the coleslaw the day before serving and store covered in the refrigerator.
- The coleslaw will keep 3 to 5 days tightly covered in the refrigerator.

This coleslaw is a crowd favorite. I make this for cookouts and potlucks and everyone loves it! This recipe is easy to double or triple if you are serving a crowd. This goes great with burgers, hot dogs, chicken, pork, or even steaks! It is also great on top of tacos or a pulled pork sandwich! Whip up a batch ASAP! You won’t be disappointed!

Pineapple Coleslaw
Equipment:
Ingredients:
- 1 (16-oz) package coleslaw mix
- 1 cup chopped pineapple from a can of chopped pineapple
- 2 Tbsp vinegar
- 2 tsp sugar
- â…” cup mayonnaise
- black pepper to taste
Instructions:
- In a large bowl, whisk together vinegar, sugar, mayonnaise and pepper. Add pineapple and slaw mix. Toss to combine. Chill.

My mom used to make her coleslaw with pineapple sometimes, and sometimes she added chopped apples. Both were delicious!
So I’m confused. Do you use one full can of drained crushed pineapple and then one cup of chunk pineapple? Your recipe says one can of “chopped” and I assume that is “crushed”. But then in your ingredients list you only talk about chopped. Please clarify for me.
I did not use crushed pineapple. I used a can of chopped pineapple chunks. You can use chunks or tidbits.
I make a pineapple cole slaw and it also has mangos and chopped jalapeno. I serve it on top of my fish tacos with some diced avocado and queso fresco. So good!

What kind of vinegar do you use in this dish?
I used white vinegar
I have been making coleslaw with pineapple for years. I use a little bit of the strained pineapple juice to dilute the mayo so it isn't quite so thick and I also add raisins and chopped walnuts. Yum!
I've been adding pineapple to my slaw for years now, it's so good in it and a suprise too! My mom use to add banana slices too when we were kids.
I wouldn't have thought that pineapple would be good in slaw either, but I may have to give this a try!
I used bag slaw, Marie's Slaw Dressing, chucks of fresh pineapple and blueberries. Just made this last weekend for a potluck and everyone loved it!
I used to make this 30 years ago. I got the recipe from my friend when she served it for her daughter's first birthday dinner. The daughter turns 31 years in November! Great coleslaw recipe. Thanks for reminding me about the recipe.
