Prosciutto Wrapped Filets

I bought a big pack of prosciutto recently at Sam’s.  The first thing Chicken Legs said when he saw the prosciutto was that we needed to make prosciutto wrapped filets.  I thought that was a great idea!  I wrapped the filets and marinated them in some olive oil, balsamic and Italian seasonings.  They turned out great!  The steaks were tender and really flavorful.  We grilled the steaks, but you could also use my Steakhouse cooking method of searing them in a skillet and finishing them off in the oven.  You can find the directions here.  These filets would be great with the Steakhouse Mac and Cheese and Bourbon Mushroom I recently shared.  I think this would make the perfect Valentine’s Day dinner.

Prosciutto Wrapped Filets
(Printable Recipe)

4 (8 oz) filets
¼ cup olive oil
¼ cup balsamic vinegar
2 tsp minced garlic
1 Tbsp Italian seasoning
4 slices prosciutto, sliced thin

Wrap one slice of prosciutto around each steak.  Secure with toothpick.  Whisk together olive oil, balsamic vinegar, garlic and Italian seasoning.  Pour over steaks.  Refrigerate at least an hour.  Grill/Broil/Saute steaks to desired temperature.

  1. Genius idea from your hubby. We often use bacon but some good Benton's prosciutto would be great – providing good flavor with less fat than bacon.
