This Puffy Bacon Cheddar Pie is a new favorite at our house. We made this for lunch last week and almost finished the whole thing between the two of us! SO good! I mean, who doesn’t love bacon and cheese?!?! This is similar to a quiche but less eggy.
This recipe is very easy to make and is ready to eat in under an hour. It is great for breakfast, brunch, lunch, or dinner. I usually double the recipe because this doesn’t last long around my family and friends.
How to Make Puffy Cheddar Bacon Pie
This pie is super easy to make. Sprinkle bacon and cheese in the bottom of a pie crust. Beat together egg yolks, sour cream, flour, and salt until smooth. In another large bowl, beat egg whites until stiff. Fold egg whites into the sour cream mixture and spread over cheese. Bake the pie until golden brown.
- I used a frozen pie shell. I did not pre-bake or thaw the crust before making this.
- Can substitute turkey bacon for pork bacon.
- For a time-saver, use a bag of pre-cooked real bacon pieces. I buy the big bags at Costco.
- You can use any cheese that you enjoy. I used cheddar. Smoked gouda, Swiss, pepper jack would all be good.
- This is a really good base recipe to add some veggies to. Diced tomatoes, spinach, mushrooms, onions, and bell peppers are all great!
- Can Puffy Cheddar Bacon Pie be frozen? Yes! Bake the pie and let it cool completely. Cover the pie with plastic wrap and aluminum foil and freeze.
- The pie will keep up to 3 months in the freezer.
- To reheat the pie, thaw and reheat covered in the oven at 350ºF for 25 to 30 minutes or reheat in the microwave.

Not a sour cream fan… could you substitute heavy whipping cream???
What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
Try using Greek yogurt.
Do you think this could be made crustless?
Thanks!
You can certainly give it a try!
