This Pulled Pork Cornbread Casserole is a new favorite! Pulled Pork, BBQ sauce, and cheese on top of yummy cornbread. Seriously delicious! This is a great way to use up any pulled pork you might have left from Memorial Day. If you don’t have leftover pulled pork, you can throw a pork butt in the slow cooker or Instant Pot or buy some prepared pulled pork at the grocery store. I actually really  LOVE the pulled pork from Costco. It is so smoky and delicious!!

How to Make Pulled Pork Cornbread Casserole

This casserole is super easy to make. Start with making the cornbread base. Mix together Jiffy mix, creamed corn, eggs, milk, and cheese. Pour the batter into a baking dish. Partially bake the cornbread and remove it from the oven. Top cornbread with pulled pork, BBQ sauce, and cheese. Bake until the pork is warm and the cornbread is done.

You can make this ahead of time and freeze it for later. I suggest partially baking the cornbread and adding the pulled pork, BBQ sauce and cheese and then freezing the casserole. When ready to bake, thaw completely and bake 20 to 30 minutes.

What to Serve with Pulled Pork & Cornbread

We really loved this casserole. It is comfort food at its best! The sweet cornbread crust goes perfectly with the pulled pork. We served this with some coleslaw, pickles, and extra BBQ sauce. All you need is a big ol’ scoop of some Quick Baked Beans and you are all set! We had the leftovers for lunch the next day and it was just as good! I love it when I can get two meals out of one night of cooking! Give this a try ASAP! I promise that you won’t be disappointed.

Pulled Pork Cornbread Casserole – sweet cornbread crust topped with pulled pork, BBQ sauce and cheese. Ready to eat in under an hour. Ingredients:

  • 1 (8.5-oz) pkg corn muffin mix
  • 1 (14.75-oz) can creamed corn
  • 2 eggs
  • ½ cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1 lb cooked pulled pork
  • cups BBQ sauce

Instructions:

  • Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • Toss pulled pork in BBQ sauce. Spread pork mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
  • Allow to cool for 5 minutes and cut into 8 squares.

Notes:

I used Jiffy Mix cornbread mix.
4 bottles of store-bought BBQ sauce
My favorite BBQ sauces are G. Hughes, Sweet Baby Rays, Stubbs, and Williamson Brothers.
I like Costco’s Kirkland brand pulled pork.

  1. I made this tonight and it was delicious! I LOVED the slightly burnt, crunchy edges of the cornbread so much that next time, I think I’ll make this in individual muffin tins vs. one big pan. Either way, it was amazing. Hubby & I both had seconds!

    Also to answer one of the other commenters, one pound of pulled pork is approximately 2 cups.

  4. This was really good. I didnt have Jiffy but made my own recipe adding a little sugar to it.

    1. I weighed the pork on a kitchen scale to get a pound. I did not measure it in cups, so I’m not sure.

  5. You mentioned using the Kirkland brand pulled pork… well, I used the Del Real pork carnitas from Costco and it turned out amazing! The package comes with two packs, and so we used one for carnitas and one for this. Absolute perfection!!

  6. Taste like a Tamales. I used gluten free Bob’s Red mill corn bread mix. I mixed the 2 recipes heated the oven at 400 degrees,
    used a 13X 9 greased pan. THEN FOR THE recipe I used
    I can of cream style corn.
    1 1/2 Cups of milk, ,
    2 eggs,
    1 cup cheese ,
    1 pkg of Bob Redhill cornbread-
    1/8 C. Of Wesson oil beat it on high with an electric mixer for 30 seconds. Poured in greased 13 X 9 pan.
    Baked at 400 degrees for 15 minutes.
    Then added in a bowl 1 lb of pulled pork in a bowl added 1 1/4 Cups sweet Baby Ray’s mixed well. Spread over the corn bread. Topped with 1 cup cheese. Baked another 15 minutes. Let it rest 5 minutes and serve. Be aware do not bake it as long as the original recipe. Enjoy… Diana Krotzer

  8. Made this tonight and it was a hit! We usually smoke a large pork shoulder every couple of weeks and are always looking for great recipes for the leftover meat. This was perfect. Hubby and two little kids really enjoyed it! Thank you for posting this!
