This Pulled Pork Cornbread Casserole is a new favorite! Pulled Pork, BBQ sauce, and cheese on top of yummy cornbread. Seriously delicious! This is a great way to use up any pulled pork you might have left from Memorial Day. If you don’t have leftover pulled pork, you can throw a pork butt in the slow cooker or Instant Pot or buy some prepared pulled pork at the grocery store. I actually really  LOVE the pulled pork from Costco. It is so smoky and delicious!!

How to Make Pulled Pork Cornbread Casserole

This casserole is super easy to make. Start with making the cornbread base. Mix together Jiffy mix, creamed corn, eggs, milk, and cheese. Pour the batter into a baking dish. Partially bake the cornbread and remove it from the oven. Top cornbread with pulled pork, BBQ sauce, and cheese. Bake until the pork is warm and the cornbread is done.

You can make this ahead of time and freeze it for later. I suggest partially baking the cornbread and adding the pulled pork, BBQ sauce and cheese and then freezing the casserole. When ready to bake, thaw completely and bake 20 to 30 minutes.

What to Serve with Pulled Pork & Cornbread

We really loved this casserole. It is comfort food at its best! The sweet cornbread crust goes perfectly with the pulled pork. We served this with some coleslaw, pickles, and extra BBQ sauce. All you need is a big ol’ scoop of some Quick Baked Beans and you are all set! We had the leftovers for lunch the next day and it was just as good! I love it when I can get two meals out of one night of cooking! Give this a try ASAP! I promise that you won’t be disappointed.

Instructions:

  • Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • Toss pulled pork in BBQ sauce. Spread pork mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
  • Allow to cool for 5 minutes and cut into 8 squares.

Notes:

I used Jiffy Mix cornbread mix.
4 bottles of store-bought BBQ sauce
My favorite BBQ sauces are G. Hughes, Sweet Baby Rays, Stubbs, and Williamson Brothers.
I like Costco’s Kirkland brand pulled pork.

    I use Famous Daves original cornbread and sweet baby rays spicy bbq sauce. It’s a great meal to freeze!!! ( husband is out of town Monday-Friday)

Although confession – I have never made it with pulled pork but instead pulled chicken (I just boil some chick tenders until 165 degrees, shred it with a hand mixer, and add bbq sauce). It is so fast and easy for a quick weeknight meal. Fam fav! ❤️😋

  4. I would like to make this ahead and freeze it. You mentioned partially baking the cornbread…I am just a little confused. Would you pare back just cornbread for like 10 min then add remaining ingredients and then freeze?
