These BBQ Pulled Pork Enchiladas combine two of our favorite flavors – barbecue and Mexican food! I made these for dinner last week and they have quickly become a new favorite at our house. BBQ pork and cheese wrapped in flour tortillas and baked in bbq sauce and enchilada sauce. We ate these for dinner and had the leftovers for lunch. SO good! All you need is some chips and salsa, rice, and beans and you are ready for a fiesta better than any restaurant.
How to Make Pulled Pork Enchiladas
This recipe is easy to make with only a few simple ingredients. In a large bowl, combine bbq pulled pork and shredded cheese. Spray a 9×13-inch baking dish with cooking spray. Spread pork mixture onto the center of each tortilla. Roll up the tortillas and place them seam side down in the prepared baking dish.
In a medium bowl, whisk together enchilada sauce and bbq sauce. Pour sauce over the top of the tortillas. Sprinkle shredded cheese over the top of the casserole. Bake uncovered in the oven until warm and bubbly. Garnish the enchiladas with fresh cilantro.

Pulled Pork Enchiladas
Ingredients:
- 1 (16-oz) package barbecue pulled pork with sauce
- 3 cups shredded cheddar cheese, divided
- 1 (10-oz) can enchilada sauce
- ½ cup bbq sauce
- 8 (8-inch) flour tortillas
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- In a bowl, combine pulled pork and 2 cups of shredded cheddar cheese.
- Spread the pork mixture down the center of each tortilla. Roll up tortillas and place, seam side down, into the prepared pan.
- In a small bowl, combine enchilada sauce and bbq sauce. Pour sauce over the enchiladas.
- Sprinkle tortillas with the remaining 1 cup of shredded cheese.
- Bake uncovered for 25 to 30 minutes, until warm and the cheese has melted.
