This Pulled Pork Vegetable Soup is hands down the BEST vegetable soup I’ve ever eaten! OMG! I don’t even really like veggies, and I licked my bowl clean! The smoky pulled pork made all the difference. YUM! The best part about this recipe is that it is ready to eat in under 30 minutes. You can’t beat quick, easy AND delicious. Whip up some cornbread and you are set.
How to Make Pulled Pork Vegetable Soup
This soup is super easy to make. In a large stockpot or Dutch oven bring pulled pork, chicken broth, corn, mixed vegetables, tomatoes, chili powder, onion, and garlic to a boil. Simmer for a few minutes. Add some instant brown rice and cook until the rice is tender.
Tips & Frequently Asked Questions
- For the pulled pork, I used some smoked pulled pork from Costco. It is crazy delicious.
- If you don’t have access to Costco, just look for pre-cooked pulled pork at the grocery store. It is where the other prepared meats are. At my store, it is near the diced ham and pre-made potatoes near the produce section.
- Look for pulled pork that doesn’t have BBQ sauce on it. Walmart sells their Great Value brand of uncured pulled pork without sauce.
- You can also pick up a pound of smoked pork from your favorite BBQ joint.
- I used instant brown rice. Feel free to substitute instant white rice.
- If you want to use regular white or brown rice, you will need to increase the cooking time to get the rice cooked. I would simmer the soup with the regular rice the time the package suggests for cooking. You may need to add more broth if using regular rice.
- Can Pulled Pork Vegetable Soup be made in the crockpot? Yes! Add all the ingredients to the slow cooker and cook for 6 to 8 hours on LOW. Add rice and cook for an additional 10 minutes.
- To make this a freezer meal – place all ingredients, except rice, in a gallon ziplock bag. Place in the freezer. When ready to cook, place the contents of the freezer bag into the slow cooker and cook for 6 to 8 hours on LOW. Add rice and cook for an additional 10 minutes.
- Can freeze leftovers in ziplock bags for later. To reheat, thaw, and reheat in the microwave, on the stovetop or in the slow cooker.

Equipment:
Ingredients:
- 1 lb smoked pulled pork
- 3 cups frozen mixed vegetables
- 4 cups low-sodium chicken broth
- 1 (15-oz) can creamed corn
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- 1 (15-oz) can stewed tomatoes, undrained
- 1 tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp pepper
- 1 tsp chili powder
- ½ tsp salt or to taste
- 1 cup instant brown rice
Instructions:
- Add all ingredients except brown rice to Dutch Oven. Bring to a boil.

I loved this soup. It was so good.I didn’t have rice so I substituted barley for the rice. Delicious. It also freezes well and tastes just as good as when I first made it.
I just made it but had to add a can of tomato sauce to counter the sweetness of the carrots (I put in a bag of frozen peas and carrots) and I added 2 tablespoons of cumin to fully bring out the southwestern flavor the Rotel tomatoes and chilis + chili pepper gave it. Very good soup! My husband loves it. 😀

I love this soup!! The first time I made it as is; the 2nd and 3rd times, instead of pulled pork I put raw chicken breasts right into the pot and let them cook with the soup. Then I shredded them and put them back in. It worked great! Thanks for the recipe – it’s soooo tasty and easy!

You can use pulled pork with BBQ sauce – it will be just fine. I’ve never heard of canned pork, but I assume it would work. Pork is pork.
Julie look up slow cooker Conchitas. A pork butt at the store is usually on sale for $5-$7. Slow cook it for 8-9 hours then food save and freeze in 1lb bags to use in future soups and tacos. It’s so easy and way cheaper in the long run. 🙂

If you don't want to go to the store to get a can, maybe try a can of regular corn or some frozen corn kernels.

I made it with Walmart brand uncured pulled pork and it was on the table in less than 30 minutes. Added a wee bit of apple cider vinegar and brown sugar at the end of cooking. Omitted rice. This recipe is 5 stars! No exaggeration. So little work for such good taste! Thank you!
