Mexican food is a staple at our house. We never miss Taco Tuesday! I’ve been working on an authentic Mexican rice recipe and I finally found it. This rice is just as good, if not better than the rice at our favorite Mexican restaurant. It is super simple to make – long-grain rice, Rotel diced tomatoes and green chiles, chicken broth, chili powder, and paprika. It only takes about 20 minutes from start to finish. Just enough time to whip up some tacos or sauté some fajitas!
How to Make the Best Mexican Rice Recipe
This recipe is super easy to make with only a few simple ingredients. In a skillet or large saucepan, melt butter over medium heat. Add long-grain white rice and cook until it starts to turn golden brown. Add chicken broth, Rotel diced tomatoes and green chiles, chili powder, and paprika. Bring to a boil. Cover the pan. Reduce heat and simmer on low heat for about 20 minutes. Fluff the rice with a fork and enjoy.

- This recipe uses uncooked long grain white rice. Using other types of rice will change the liquid and cooking time.

Ingredients:
- 2 Tbsp butter
- 1½ cups long grain cooking rice, uncooked
- 2½ cups chicken broth
- 1 (10-oz) can Rotel diced tomatoes and green chilies
- 1 tsp chili powder
- ½ tsp paprika
Instructions:
- In a large saucepan, melt butter over medium-high heat. Add rice and cook for 2 to 3 minutes.
- Add remaining ingredients, bring to a boil. Cover and reduce heat to simmer. Cook for approximately 20 minutes.

This was very good. I cut the Chili Powder measurement in half and put in 1/8 tsp. Cumin instead of Paprika. We aren’t huge spicy food fans, and it had just the right amount of kick. The rice had pretty well absorbed the liquid at about the 15 minute mark so I just turned off the burner and let it sit the rest of the time while I made the rest of the meal.

100% better than any boxed brand or what I’ve had at Mexican restaurants. I added heaping measurements paprika and chili powder. …just like the extra flavor.
This is easy and better than any Mexican rice I’ve ever had at any restaurant. It also reheats well. An inexpensive crowd pleaser.
