This Red Beans & Rice Casserole is a new favorite at our house. Dirty rice loaded smoked/andouille sausage and red beans and topped with fried onions. OMG! YUM! We ate this for dinner and LOVED it! It is a little spicy and a whole lotta yum! Leftovers are great too. Needless to say, this was a HUGE hit at our house. It is perfect for Mardi Gras or tailgating at LSU football games. I cannot wait to make this again!
How to Make Red Beans & Rice Casserole
This casserole is super easy to make. Start with sautéing some sliced smoked sausage or andouille sausage in a skillet. Next, add a box of Zatarain’s Dirty Rice mix and the ingredients called for on the box. Cook until the rice is done. Stir in some red beans, cream of chicken soup, and sour cream. Spread the mixture into a baking dish and sprinkle with a can of French fried onions. Pop the dish in the oven and dinner is done.
You can assemble this casserole ahead of time and refrigerate or freeze for later. If you are baking the casserole after refrigerating overnight, you might need to add a few minutes to the cooking time. It always takes a few extra minutes if baking a cold dish.
To bake the casserole after freezing, thaw completely and bake as directed below. If you are reheating a frozen casserole, thaw the casserole. Cover the dish with aluminum foil and bake at 350ºF for 30 to 40 minutes, until warm.
What to Serve with Red Beans & Rice

Red Beans & Rice Casserole
Ingredients:
- 1 (8-oz) box Zatarain’s Dirty Rice
- 1 lb smoked sausage, chopped
- 2 (15-oz) can red beans, drained and rinsed
- 1 (10.5-oz) can Cream of Chicken Soup, undiluted
- 1 cup sour cream
- 1 (2.8-oz) can French fried onions
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook smoked sausage until starting to brown. Add dirty rice mix and water called for on the package. Prepare dirty rice according to package directions.
- Remove dirty rice and sausage from heat. Stir in rinsed red beans, cream of chicken soup, and sour cream.
- Spread rice mixture into prepared baking dish. Top casserole with onions.
- Bake uncovered for 30 minutes, until bubbly.

Sure. Just mix it up and put it in the slow cooker. Cook it on LOW or HIGH until hot. Maybe 2 or 3 hours on HIGH, 4 to 6 on LOW. ?
