Pin This RecipeThis recipe combines two of our favorite vegetables – green beans and mushrooms. This is such a quick and easy recipe! It literally takes a minute to toss everything together, and the oven does all the work.
Throw this side dish in the oven while you finish up the main dish. I love how hands off this dish is. If you want to save a couple of minutes, you can definitely toss the beans and mushrooms in the olive oil, balsamic, garlic salt and pepper mixture ahead of time and refrigerate until you are ready to bake them. Perfect if you are serving these at a dinner party.
We eat these Roasted Green Beans & Mushrooms all the time. It is definitely a favorite in our house. This side goes great with everything – chicken, steak, pork and even pasta!

This Roasted Green Beans and Mushrooms is so good and healthy! I used Kikkoman Ponzu Citrus Seasoned Dressing & Sauce for a more flavorful taste. Yummy! I love it.
As much as I love Green Bean Casserole for a side dish on Thanksgiving. I am trying to lose weight and this recipe came in just in time. I will be making this in place of the casserole this year. Love the green beans & mushrooms together no matter how they are cooked. Thank you for sharing the recipe.
Can you make this on stove top?Not really wanting to turn oven on when it is so hot outside.
try it with ground chicken, basil and some chinese spices plus a little pepper ( serrano, cayenne, siracha, whatever). Mmmmm
These were good! I overcooked them just a little.
Can you substitute frozen green beens? Thanks
I’m sure that would be fine

This recipe is just as a side dish recipe should be. No fuss, no muss but still taste fabulous! That's what this recipe is. Absolutely delicious and no real work involved. We did salt and pepper our individual servings, but that's just per your own tastes. YUM! For the mushrooms I used sliced baby bellas.
Looks good. I bet it would be even better with New Potatoes as well.
I have two picky eaters in my house and they both gobbled it up. It was easy and fresh.
