Crescent rolls topped with sausage, cream cheese, Rotel, cheddar cheese, eggs, and baked. YUM! Even though this is called a breakfast casserole it is equally delicious for lunch, brunch, a baby shower, and Christmas morning. We’ve made it several times over the past few months and just can’t get enough of it. It might just be our favorite breakfast casserole!
How to Make Rotel Sausage Cream Cheese Breakfast Casserole
This breakfast casserole recipe is super easy to make with only a few simple ingredients. Cook breakfast sausage in a large skillet over medium heat until no longer pink and crumbled. Drain excess grease. Combine cooked sausage and cream cheese. Set aside.
Open a can of crescent rolls. Press crescent rolls onto the bottom and up the sides of a 9×13-inch baking dish that has been sprayed with nonstick cooking spray. Sprinkle sausage mixture over the rolls. Top with Rotel diced tomatoes and green chiles and grated cheese. In a large bowl, whisk together eggs, milk, onion powder, garlic powder, salt, and black pepper. Pour egg mixture over the sausage and cheese layer. Bake in a preheated oven until the eggs are set. Garnish with parsley or cilantro.

- 1 (8-oz) can refrigerated crescent rolls
- 1 lb sausage
- 4 -oz cream cheese, softened
- 1 (10-oz) can Rotel diced tomatoes and green chilies, drained
- 1 cup shredded cheddar cheese
- 6 large eggs
- ½ cup milk
- ½ tsp onion powder
- ¼ tsp garlic powder
- salt and pepper to taste
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9x13x2 pan with cooking spray.
- Cook sausage in a skillet over medium-high heat until no longer pink; drain excess grease. Remove from heat and add cream cheese. Stir to combine.
- Unroll crescent rolls and press into the bottom and up the sides of the 9×13 pan, pressing seams together to seal.
- Sprinkle sausage mixture, Rotel, and shredded cheese over the crust.
- Whisk eggs, milk, onion powder, garlic powder, salt, and pepper until well blended. Pour over sausage.
- Bake 40 to 50 minutes or until the center is set.
