This Rotel Sausage & Cream Cheese Croissant Breakfast Casserole has quickly become one of our favorite breakfast recipes. Flaky croissants, sausage, cream cheese, cheddar cheese, and Rotel baked in a creamy egg custard. This easy make-ahead breakfast recipe is perfect for holiday mornings, Sunday brunch, and busy weekday mornings.

How to Make Sausage Croissant Breakfast Casserole

The casserole is very easy to make with only a few simple ingredients. In a large skillet, cook sausage over medium heat until crispy. Drain excess fat on a paper towel. In a large bowl, combine cooked sausage and room temperature cream cheese. Set aside.

Chop croissants into small pieces. Place the croissant pieces in the bottom of a 9×13-inch baking dish. Sprinkle sausage mixture, Rotel diced tomatoes and green chiles, and shredded cheese over the top of the croissants.

In a large bowl, whisk eggs, half-and-half, kosher salt, and black pepper. Pour the egg mixture over the top of the casserole. Bake the casserole in a preheated oven until the eggs are set. Garnish with parsley, cilantro, or green onions.

Ingredients:

  • 6 (5-inch) large croissants
  • 1 (16-oz) package breakfast sausage
  • 6 -oz cream cheese, room temperature
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, drained
  • cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups half-and-half
  • salt and pepper to taste

Instructions:

  • Preheat oven to 350ºF. Spray a 9×13-inch deep dish baking dish with cooking spray.
  • Chop each croissant into 10 to 12 pieces. Place into the prepared pan.
  • In a skillet over medium-high heat, cook sausage until crumbled and no longer pink. Remove from heat and drain excess grease.
  • In a bowl, combine cooked sausage, cream cheese, and Rotel.
  • Sprinkle sausage mixture and shredded cheese over the chopped croissants.
  • Whisk together eggs, half-and-half, salt, and pepper.
  • Pour egg mixture over croissant mixture. Press the croissants down to submerge into the egg mixture.
  • Bake casserole for 45 to 60 minutes, until the egg mixture is set. Cover the pan with aluminum foil if it starts to get too brown.

  • Make sure to use bakery croissants. This recipe does NOT use refrigerated crescent rolls. Croissants and crescent rolls are NOT the same things. Make sure to buy croissants from the bakery.
  • I used a roll of Jimmy Dean sausage. You can use regular or hot sausage.
