How to Make Rotel Sausage Cream Cheese Grits Casserole

This dish is very easy to make with only a few simple ingredients. In a skillet, cook sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. In a large saucepan, bring chicken broth to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.

Add rotel diced tomatoes and green chiles, milk, cream cheese, Velveeta cheese, onion powder, garlic powder, and butter; stir until melted. Slowly stir in eggs until blended. Stir in cooked sausage and season with salt and black pepper. Pour the grits mixture into a greased baking dish.  Bake uncovered in a preheated oven. Garnish baked casserole with parsley or chopped green onions.

  1. I was sitting out Hurricane Ian, so I used what I had on hand. I used 1 1/2 lb Italian sweet sausage, 1 can fire roasted tomatoes with garlic, 1 can green chilies, 12 oz. Monterrey Jack cheese, and the remainder as written. Soooo tasty!!!! I am the only person who eats grits here, so I will freeze much of this dish. Many more days to enjoy this way! Thank you for a wonderful recipe ❤️.
