This Rotel Sausage Cream Cheese Grits Casserole has been on repeat at our house I made this a few weeks ago and we both fell in love with this dish. This has all the flavors of our favorite dip in a cheesy grits casserole. Now, this is not a low-calorie dish. It is definitely a splurge (and totally worth it). The recipe has a whole stick of butter, a whole block of cream cheese, AND Velveeta cheese. O-M-YUM! If you’ve never tried grits, this dish is sure to make you a fan! This casserole is great for breakfast, brunch, lunch, or dinner. All you need is some biscuits and fruit and you are set!
How to Make Rotel Sausage Cream Cheese Grits Casserole
This dish is very easy to make with only a few simple ingredients. In a skillet, cook sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. In a large saucepan, bring chicken broth to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.
Add rotel diced tomatoes and green chiles, milk, cream cheese, Velveeta cheese, onion powder, garlic powder, and butter; stir until melted. Slowly stir in eggs until blended. Stir in cooked sausage and season with salt and black pepper. Pour the grits mixture into a greased baking dish. Bake uncovered in a preheated oven. Garnish baked casserole with parsley or chopped green onions.

Ingredients:
- 1½ lb sausage
- 6 cups chicken broth
- 2 cups quick cook grits
- ½ cup butter
- 1 (8-oz) package cream cheese
- 2 (10-oz) cans Rotel diced tomatoes and green chilies, drained
- ½ tsp onion powder
- ½ tsp garlic powder
- salt and pepper to taste
- 12 -oz Velveeta cheese
- ½ cup milk
- 4 large eggs
Instructions:
- Preheat oven to 350° F. Lightly spray a 9×13-inch pan with cooking spray. Set aside.

I was sitting out Hurricane Ian, so I used what I had on hand. I used 1 1/2 lb Italian sweet sausage, 1 can fire roasted tomatoes with garlic, 1 can green chilies, 12 oz. Monterrey Jack cheese, and the remainder as written. Soooo tasty!!!! I am the only person who eats grits here, so I will freeze much of this dish. Many more days to enjoy this way!
