Hash browns, Rotel diced tomatoes and green chiles, sausage, cream cheese, cheddar cheese, eggs, milk, garlic, onion, salt, and pepper. Can make ahead of time and refrigerate or freeze it for later. This dish is great for breakfast, lunch, brunch, potlucks, tailgating, and any upcoming holiday breakfasts!

How to Make Sausage Hash Brown Breakfast Casserole

This dish is super easy to make with only a few simple ingredients. In a large skillet, cook breakfast sausage over medium-high heat until no longer pink and crumbled. Remove the sausage from the skillet and cook thawed frozen hashbrowns until they start to brown. 

Combine cooked sausage, hash browns, rotel diced tomatoes and green chiles, and cream cheese. Spread into a baking dish that has been sprayed with non-stick cooking spray.


In a large bowl, whisk together eggs and milk. Season with onion powder, garlic powder, salt and black pepper to taste. Pour egg mixture over sausage mixture. Top the casserole with shredded cheese and bake until set.

  • Preheat oven to 350ºF. Spray a 9×13-inch baking dish with non-stick cooking spray. Set aside.
  • In a large skillet, cook sausage until no longer pink. Remove sausage from the skillet and place in a bowl. Add cream cheese and Rotel. Stir until combined and set aside.
  • Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage mixture and shredded cheddar cheese.
  • Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture.
  • Bake, uncovered, for 45 to 55 minutes.

  1. That looks great! Cream cheese does not get enough credit. I’ve been looking for recipes that involve cream cheese besides potatoes, frosting and celery sticks. My additions would onions and red or green peppers like you added. But mine would also add sliced baby portobellos.
