Slow Cooker Salsa Chicken

This Salsa Chicken is a staple at our house. There are only three ingredients and it is packed with tons of great flavor! I always have the ingredients on hand to whip up this dish! I love to whip up a batch of this chicken on Sunday to have for easy meal prep during the week.

This is such a versatile recipe. The chicken can be used in tacos, burrito bowls, taco salad, tortilla wraps, and nachos. Add this easy recipe to your menu ASAP! It is sure to become a family favorite!

How to Make Crockpot Salsa Chicken

This chicken is effortless to make with only three simple ingredients! Place skinless chicken breasts in the slow cooker insert. Sprinkle taco seasoning over the chicken. Pour salsa over the chicken. Place the lid on the slow cooker and cook on LOW until the chicken is tender and cooked. Remove chicken from the slow cooker and shred with two forks. Return the chicken to the slow cooker and toss in the juices. Garnish with cilantro.

  • If you feel that there is too much liquid in the slow cooker after the chicken cooks, you can drain it out of the crockpot.
    • The amount of liquid in the crock pot will depend on your chicken and the brand of salsa.
    • I suggest removing the chicken breasts from the slow cooker and pouring the liquid into a bowl. Add the shredded chicken back to the slow cooker and gradually add the cooking liquid until you reach the desired consistency.
  • You can use any boneless skinless chicken.

How to Serve Mexican Chicken

We serve the shredded chicken in flour tortillas topped with cheese, tomatoes, lettuce, sour cream, and lime juice. This chicken is also great for burritos, enchiladas, burrito bowls, taco salad, or nachos. This is my go-to chicken for Mexican casseroles. It adds SO much flavor!
