It’s tailgating time again! We are making these Sausage Biscuits Bites for the game this weekend. We’ve made these several times; they are SO good! These are great for breakfast, lunch, snack, or dinner. Chicken Legs highly recommends serving these with some warm maple syrup.
How to Make Sausage Biscuit Bites
These biscuits are super easy to make. Take some breakfast sausage and combine it with cheddar cheese. Divide the mixture into 40 balls. Take refrigerated biscuits and split them into two rounds each. Place the biscuits in a mini muffin pan. Press the sausage ball into the biscuit and bake. I was worried that these biscuit bites would be greasy, but they weren’t.
- You can roll the sausage and cheese into balls ahead of time and assemble the biscuit bites when you are ready to bake them. Ā
- I use Tennessee Pride or Jimmy Dean sausage.
- You can substitute turkey sausage for the pork sausage if you prefer.
- This recipe uses the smaller refrigerated biscuits. Look for a 12-oz can or 6-oz can of biscuits. They will have 10 or 5 biscuits per can.
What to Serve with Sausage Biscuits
As I said, we LOVE these biscuits! They are so easy to make and they taste great!!! You can dip the bites in some Homemade Ranch Dressing or Homemade Salsa. If you are making these for breakfast, whip up some eggs and grits, and you are set!

Sausage Biscuit Bites
Equipment:
Ingredients:
- 2 (10-count) cans flaky biscuits (Grands Jr)
- 1 lb sausage, uncooked
- 2 cups shredded cheddar cheese
Instructions:
- Preheat oven to 400ĀŗF. Lightly spray a MINI muffin pan with cooking spray. Set aside.
- Mix uncooked sausage and cheese gently until well blended. Shape into 40 balls of equal size.
- Remove biscuits from cans and separate each biscuit into two layers, making 40 total biscuit layers. Press one layer of biscuit into cup of MINI muffin pan. Repeat with remaining layers.
- Place sausage-cheese ball in each biscuit cup.
- Bake for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly.
Notes:
- Do NOT precook the sausage. You are going to use the sausage raw. It will cook along with the biscuits.

About how big were the sausage balls? About a teaspoon of sausage? Or less?
It was more than a teaspoon. I just divided the sausage into 40 pieces. They were closer to a tablespoon.

Do you think you can make these ahead and freeze them? I'm looking for breakfast recipes I can make, freeze, and give to a friend for her Christmas breakfast.
You can. Bake them first and then freeze them.
We love sausage balls during the holidays, with bisquick mixed in, but I love this idea of putting the sausage in a biscuit cup! Thanks!
