I have been making these Sausage & Cream Cheese Crescents for as long as I can remember. I got the recipe at one of my first jobs out of college and have been making it ever since. It is super easy to make and tastes great. These are great for breakfast or as an appetizer. Whenever I take these to a party or potluck I never have any leftovers.
How to Make Sausage & Cream Cheese Crescents
These crescent bites are SUPER easy to make. Start with browning sausage. As the sausage is cooking, break it up into small pieces. Drain any fat. Combine the cooked sausage with cream cheese. Cut refrigerated crescent rolls in half. Top each roll with the sausage mixture and bake.
- I used Jimmy Dean Sausage. Can substitute turkey sausage.
- I like to pulse the cooked sausage in the food processor a few times to make sure it is chopped very fine.
- Can substitute low-fat cream cheese if you prefer.
- Can use reduced-fat crescent rolls. I use the reduced fat crescent rolls all the time. You can’t tell a difference.
- The filling can be made ahead of time and refrigerated up to 3 days.
- I use a pizza cutter to cut the crescent rolls in half. It makes it much easier!
- I use a small cookie scoop to scoop the filling on to the crescent rolls.
- These bites taste great hot out of the oven or cooled to room temperature.

We make these crescent bites all the time. I am addicted to them! As I said these are great at breakfast with some scrambled eggs, grits, and fruit. They are equally delicious as an appetizer at a party or potluck. I often take these to our tailgates. They are perfect for those early morning games!

Equipment:
Ingredients:
- 1 (1-lb) roll breakfast sausage , cooked and crumbled
- 1 (8-oz) cream cheese , softened
- 2 (8-oz) cans refrigerated crescent rolls
Instructions:
- Preheat oven to 375ºF.
- Mix cooked sausage and cream cheese together.
- Separate rolls into triangles. Cut eat triangle in half lengthwise making two triangles. Using a small cookie scoop and scoop sausage filling onto each roll and roll up.
- Bake for 15 minutes, or until golden brown.

Just made a half batch of these for breakfast. Didn’t quite have enough cream cheese so I added a little sharp cheddar. I also used hot country sausage. These are so good!
Can I freeze these after they are cooked or before?
I would freeze them after cooking. I’ve never frozen these unbaked. I’m not sure how well crescent roll dough does after freezing. If you try a few, let us know.

What kind of sausage? Is it breakfast sausage or italian sausage?
Either is fine – they are basically the same thing. I used Jimmy Dean.
Can these be frozen before baking?
I haven’t frozen them unbaked. I am not sure how the rolls would be after freezing. I doubt they would bake up the same. I would suggest freezing them after baking. You can also make the sausage & cream cheese mixture a few days in advance and assemble the crescents when ready to bake.

I love these! I make them like pinwheels rolling half of the mixture in one package of rolls then I add jalapenos to the other half and do the same thing. They are the BEST party food ever! I always have people asking where I got the recipe

If you do that, bake them first and then freeze them. Just reheat them when you are ready to serve them.
I use sage sausage and stuff it into mushrooms. They are so tasty! I will definitely be trying this with crescents now.

A can of green chilies mixed in with the sausage is what makes this a favorite at our house, but we like spicy! When I was a kid, we called them Rattlesnake Bites.

MinaMarie – correct. You are splitting 16 crescent rolls into 32 crescent rolls.

Wend – you are going to take the 8 triangles and cut them into 16 triangles. Just lay one crescent roll flat with the wide end facing you and cut it straight down the middle to get two triangles.

To reheat them, I wrap them in foil and bake them at 350 for about 15 minutes or so.
Hi. I will be making these Friday to take to a party Sat. I'm assuming after baking them, I need to put them in the refrigerator because of the cream cheese?? How do I reheat them? Thank you!
