Easy Tater Tot Breakfast Casserole

This Sausage Cream Cheese Tater Tot Breakfast Casserole has all of my favorites in one pan. Sausage, cream cheese, tater tots, eggs, and cheese. YUM! Super easy to make and it tastes great. Even though this is called a breakfast casserole, it is perfect at any time of the day! We love breakfast for dinner! Whip up some grits and biscuits and enjoy!

How to Make Tater Tot Casserole

This breakfast casserole is super easy to make with only a few simple ingredients. In a large skillet, cook sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. Add cream cheese to the skillet and stir to combine. Break the sausage mixture into large crumbles.

In a bowl, combine sausage mixture, shredded sharp cheddar cheese, and frozen tater tots. Spread the mixture into a deep dish 9×13-inch baking dish. In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Pour the egg mixture over the tater tots and bake in a preheated oven until the eggs are set. Garnish with dried parsley.

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • In a large skillet, cook sausage until no longer pink. Drain fat. Add cream cheese to skillet and mix with cooked sausage.
  • In a large bowl, toss together tater tots,sausage and cream cheese mixture, and shredded cheddar cheese. Pour into a lightly greased 9×13-inch pan.
  • Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over tater tot mixture.
  • Bake uncovered for 60 – 70 minutes, or until eggs are set.

I used cheddar cheese in this casserole. Feel free to use any cheese you prefer – gouda, Colby, Mexican cheese blend. If you like it, use it!
