This Sausage Cream Cheese Tater Tot Breakfast Casserole has all of my favorites in one pan. Sausage, cream cheese, tater tots, eggs, and cheese. YUM! Super easy to make and it tastes great. Even though this is called a breakfast casserole, it is perfect at any time of the day! We love breakfast for dinner! Whip up some grits and biscuits and enjoy!
How to Make Tater Tot Breakfast Casserole
This breakfast casserole is super easy to make. Start with browning some sausage. Combine the cooked sausage with cream cheese. Crumble the sausage mixture into a baking dish. Add cheese and frozen tater tots. Gently toss to evenly distribute in the pan. Whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Pour over the tater tot mixture and bake.
- I used Jimmy Dean breakfast sausage in this casserole. You can use any flavor you prefer – regular, hot, maple, sage, Italian.
- Can substitute turkey sausage for pork sausage.
- There is no need to thaw the tater tots before adding to the casserole.
- I used cheddar cheese in this casserole. Feel free to use any cheese you prefer – gouda, Colby, Mexican cheese blend. If you like it, use it!
- Feel free to add onion, bell peppers, or a can of Rotel tomatoes to the mixture.
- To reduce calories, you can substitute egg beaters for eggs. You will need 2 cups of egg beaters for this recipe.
- Can assemble casserole ahead of time and refrigerate overnight. You may need to add a few minutes to the cooking time if baking directly from the refrigerator.
- Can make the casserole in advance and freeze for later. I freeze the casserole unbaked. You can also freeze the baked casserole.
- To bake casserole after freezing, thaw completely and bake as directed below.
- To reheat casserole after freezing, partially thaw. Cover with aluminum foil. Bake at 350ºF for 30 to 45 minutes, until warm.

To half the recipe, how long in the oven
Made it for dinner per the recipe. I did use 2 pounds of hot Jimmy Dean sausage. We all loved it. It will feed a crowd as it is very filling. I like all the additions that others have added. Cream cheese is the difference, very good.
If I want to make only 1/2 the recipe using an 8×8 pan how long would I cook it for?
Breakfast is my favorite/necessary meal of the day. Is this a casserole that I can make ahead and eat for a few days, reheating in a microwave?
yes
I cannot have sausage, would this recipe work with 2 lbs of crispy bacon instead of sausage?? Thanks in advance. I cannot wait to try this recipe for dinner very soon!!
You can try it!
Made this for Easter brunch. It was a hit with everyone! I used cut up sausage links because that is all I had on hand and it worked quite well. I can see mixing this recipe up for lots of different versions. Thanks for sharing!
Great recipe. I made two for a football tailgate – good hot food on a cold Michigan morning. In one I added peppers and onions and used chorizo and Mexican three cheese blend. Turned out great and had a tiny bit of extra heat.
Sounds delicious!
One of the best egg casseroles I’ve had or made in a LONG time. Phenomenal flavor, It all sticks together thanks for the cream cheese. I added onion to the sausage & cream cheese mixture and it didn’t disappoint. I also really like how this recipe is additions friendly – you can add spinach, veggies, anything you want to just add more to the dish. It’s a great great casserole and I’ve already planned to make it Christmas morning for brunch. Thanks for sharing this recipe!
SO glad you enjoyed it!
This is very good! The only change I made was I put the tots on top of the casserole after I had it in the pan. I will make this again. Thank you
Has anyone tried this in a Crockpot? Thinking it would be a great rv/camping overnight breakfast
Made this for breakfast meal prep- it turned out amazing and delicious! I added a box of frozen spinach to the sausage mixture for a bit of added nutrition. Thank you for sharing this recipe!

I made this recipe but inadvertently used 1 instead of 2 pounds of sausage. It was one of the best breakfast casseroles we’ve ever had. The cream cheese adds so much flavor and texture. Breakfast casseroles for dinner is a very good thing! 💕
We love breakfast for dinner too! So glad you enjoyed it!
Do you think this work as muffins? If so, how long would they need to bake?
What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
Do you think this would work with shredded hash browns instead of tater tots?
Yes
