How to Make Sausage Gravy Breakfast Skillet
This casserole is super easy to make. Start with cooking some sausage. Remove the sausage from the skillet and add hash browns. Cook the hash browns until they start to turn golden brown. Add the sausage back to the skillet. Top with shredded cheese. Whisk together gravy mix, water, and eggs. Pour the gravy mixture over the sausage. Pop the skillet in the oven and bake.
- Don’t have a skillet? You can make this casserole in a baking dish instead.
- I used a roll of Jimmy Dean Sausage. You can use any flavor or any brand of breakfast sausage you prefer.
- Feel free to substitute turkey sausage for the regular pork sausage.
- For the gravy mix, I used a packet of Pioneer Sausage Gravy.
- You can assemble the casserole in advance and refrigerate or freeze for later.
- To bake the casserole after freezing, thaw completely and bake as directed.
- You can also freeze the baked casserole for later. To reheat, thaw and reheat in the microwave or covered with aluminum foil in the oven.
What to Serve with Sausage Hash Brown Casserole
While this is called a breakfast skillet, it is also delicious for lunch, or dinner. We usually serve this with some biscuits, grits, and/or fruit. This is also delicious with a batch of Cranberry Mimosa’s for brunch! Sounds perfect!

Excellent and easy to prepare!! I used O’brien potatoes and would definitely make this again.
Would I double the recipe and bake in a 9 x 13 pan? What temperature and how long to bake?
I assume at the same temp and the same time
Made these this morning with your 7up biscuits very tasty!
Sounds like a delicious breakfast!
Sorry should have read is two eggs enough?
So I’m getting ready to make this and I’m a little confused do I mix the gravy mixes if I’m going to cook it is that where the water comes in and do I need to cook it or do I simply added to the eggs just needing some clarification also is two weeks enough for a pound of sausage and a pound of potatoes wonder what would happen if I increased it to three maybe four eggs
Just mix together the gravy packet, the amount of water called for on the packet, and the eggs. That is it. No cooking before baking.
I got the idea from the back of the pioneer gravy pack but loved how you tweeked it. I loved that you added more sausage (I used turkey) and how you advised to just mix the gravy mix with water. So much easier! I’m taking to an after tennis brunch for the ladies. I made myself a portion and loved it! Yum and thank you for the tips.
