Easy Breakfast Casserole Muffins

These easy Sausage Hash Brown Breakfast Muffins are a new favorite at our house! They are basically individual breakfast casserole bites. The best part about this recipe is that it is very simple to make with only 6 ingredients. Sausage, hash browns, cheese, eggs, milk, and Bisquick. I always have the ingredients on hand so I can whip up the muffins for a quick meal. They are great for breakfast, lunch, or dinner. I love to make these for tailgating and parties too.

How to Make Sausage Hash Brown Breakfast Muffins

These muffins are super easy to make. Cook some breakfast sausage. Combine the sausage with eggs, milk, cheese, Bisquick, and hash browns. Scoop the batter into a muffin pan and bake. That’s it!

  • I used Jimmy Dean Sausage. You can use any brand that you prefer. I like to use hot sausage in this recipe. It gives the muffins more flavor.
  • For the hash browns, I used Simply Potatoes refrigerated shredded hash browns. Feel free to use frozen shredded hash browns. I would suggest letting the potatoes partially thaw before adding them to the batter. If you are short on time, pop them in the microwave to get them thawed.
  • If you need a gluten-free recipe, make sure to use Gluten-Free Bisquick.
  • I used a regular muffin pan for this recipe. Feel free to use a mini muffin pan. You will need to reduce the cooking time if you use the smaller muffin pan.
  • Can Sausage Hash Brown Breakfast Muffins be frozen? Yes! Bake the muffins and let them cool completely. Place the muffins in a freezer bag and freeze for later. To reheat, pop the muffins in the microwave or wrap in aluminum foil and bake at 350ºF until warm.

  • In a skillet, cook sausage until no longer pink. Drain fat.
  • Combine cooked sausage, Bisquick, eggs, cheese, milk, and hashbrowns.

  • Bake for 20 minutes, until brown.

  4. I’ve been making these for a while. The only things I do different is:
    I use Extra large eggs and I add 2 Tbsp of Onion, 2 Tbsp of Red Bell Pepper and 2 Tbsp of Green Bell Pepper. Otherwise follow the recipe. Always get asked for the recipe. I refer them to the plainchicken.com site. Thank you for the recipe. Really good!

  7. I was doubtful. Most breakfast “muffin” recipes that are not sweet usually come out far too eggy, and in my experience do not freeze well. Well, thank you, Plain Chicken! I used diced ham and leftover cheese I had. They cooked up nicely with no eggy aftertaste! I can see how these would be popular for potlucks, showers, etc. I plan to freeze for quick breakfasts so we aren’t tempted with fast food. I also enjoy that the potatoes and meat and cheese are the stars rather than Bisquick which usually is too bready for me in savory muffins. I can’t wait to make my next version with spicy sausage and green chilies.
