One of our favorite breakfast casseroles is the McMuffin Casserole on the blog. It is SO good! I didn’t have any Canadian bacon in the house, so I decided to try it with sausage. Sausage McMuffins are my favorite fast food breakfast, so I had high hopes for this version. The verdict? Delicious!!!
Chopped English muffins, sausage, cheese, eggs and milk. I mixed this up in the morning and we ate this for lunch. Chicken Legs recommends serving this with some maple syrup. I gave it a try with the syrup and it was really good. This would be great for an easy weekday breakfast, brunch, or even overnight guests. Serve this with some fresh fruit for a complete meal!
**I used Bay’s English Muffins in this casserole. They are in the refrigerated section of the grocery store. I think they hold up really well in this casserole and don’t get soggy.**
As I said, this was a HUGE hit at our house. We make it all the time. This is a very filling casserole, so you don’t need a lot to go with it. We usually just have some fruit or grits. Here are a few of our favorite recipes from the blog that go great with this breakfast casserole:

Sausage McMuffin Casserole
- 4 English muffins, split (Bays)
- 8- oz breakfast sausage, cooked and crumbled
- 1 cup cheddar cheese
- 4 eggs
- 1¼ cup milk
- salt and pepper, to taste
- Grease an 8-inch square baking dish. Cut each half of the English muffins into 6 pieces. Add half of the cubed English muffins in a single layer. Top with half of the sausage and ½ cup of the cheese. Layer the remaining English muffins and sausage and ½ cup more cheese.
- Whisk together the eggs, milk, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole. Wrap the baking dish with plastic wrap and place refrigerate for at least 1 hour, or up to 1 day.
- Bake at 325 degrees 45 to 50 minutes.
Do you bake covered or uncovered?
Thinking about freezing in individual portions. Has anyone tried this and if so, how do you reheat? Sounds delicious…thanks!
ou can reheat in the microwave or covered in foil in the oven.
Hubby and I love this casserole for dinner. Great as is but also enjoy it topped with maple syrup. Agree with Maria who suggested toasting the English muffins first.
This recipe has become a staple at every brunch gathering. It is so good and such a crowd pleaser!
Could you make in a slow cooker? How long would you leave it cook?
I’ve never cooked this in the slow cooker so I am not sure how long it would take.
If I refrigerate this overnight, do I need to let it come to room temperature before I bake it, or add time?
Giving this a try to make when the Kids are here for Thanksgiving and will be doubling.
You don’t need to let it come to room temperature, but you certainly can. It may take longer to bake when doubled. I haven’t doubled it, so I’m not sure if it will take a few minutes longer or not.
Sounds delicious! Can you double the recipe?
We loved it with three pepper cheese! A nice kick!
sounds like a winner–I always stop to look at Pinterest recipes from Plain Chicken because I’ve never been steered wrong yet!
SO glad you are enjoying the recipes!
funny–my name would be kbaker, too and I always stop for Plain Chicken recipes! keep up the great work!
Toast the English muffins first, adds great texture.
I love your site! Just completed my menu for next week by adding this to our "brunner" night, which is every Friday 🙂
The original Egg McMuffins were served with orange marmalade…a much forgotten breakfast condiment. Going to the grocery store to pick up what I need to fix this. Thank you for the recipe.
Do you happen to have measurements for a 9×13 pan? Or would I just double it? Thanks
Girl!! Whatttttt!! How did I NOT know that this casserole existed?? Trying ASAP!
Can you use heavy cream instead of milk?
I think that would be fine.
