Breakfast casseroles are a favorite at our house, especially during the holidays. This Sausage & Potato Breakfast Casserole is at the top of our list. It is easy to make and tastes fantastic! It is super creamy and packed full of great flavor. Sausage, creamy potato soup, eggs, and CHEESE! I mean, how can you go wrong with this combination. All you need is some fruit and biscuits and you are set!
How to Make Sausage & Potato Breakfast Casserole
This casserole is very easy to make. Start with browning the sausage. I used a roll of Jimmy Dean sausage. You can substitute turkey sausage if you prefer. Once the sausage is cooked, drain the fat and stir in two cans of cream of potato soup. Spread the sausage and potato mixture into the baking dish. Whisk together eggs and milk and pour over the sausage mixture. Top with some shredded cheese and bake.
- I used a roll of Jimmy Dean breakfast sausage. You can use any brand and any flavor you prefer.
- Can substitute turkey sausage for pork sausage.
- Do NOT make the soup. You are just going to use the contents of the can.
- I used shredded cheddar cheese. Feel free to substitute your favorite cheese.
Can Sausage & Potato Breakfast Casserole Be Made in Advance?
This casserole is a GREAT make-ahead breakfast casserole. You can assemble the casserole the night before and refrigerate it overnight. PERFECT for the holidays and overnight guests.
Can Sausage & Potato Breakfast Casserole Be Frozen?
This breakfast casserole can be assembled and frozen unbaked or baked. Perfect for when you want to drop off a casserole to a friend that has had a baby or surgery.
I prefer to freeze this casserole unbaked. To bake the casserole after freezing, thaw completely and bake as directed below. You can also freeze this casserole after baking and reheat when ready to serve. To reheat, thaw completely and microwave or cover and reheat in the oven.
Sausage Breakfast Casserole is Great for a Crowd
This casserole is perfect for potlucks, tailgating, baby showers, overnight guests, and holiday mornings. You can bet this will be on our table Thanksgiving morning! It might make an appearance for Christmas Eve or Christmas morning too.

Sausage & Potato Breakfast Casserole
Ingredients:
- 1½ lb sausage
- 2 (10.5-oz) cans cream of potato soup
- 8 eggs
- 1 cup milk
- salt and pepper to taste
- 1½ cups shredded cheddar cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a skillet over medium-high heat, cook sausage until no longer pink. Drain fat.
- Combine cooked sausage and undiluted cream of potato soup. Spread in bottom of prepared pan.
- Whisk together eggs, milk, salt, and pepper. Pour over sausage mixture. Top casserole with shredded cheese.
- Bake uncovered for 50 to 55 minutes.
