How To Make Sausage & Ranch Tater Tot Breakfast Casserole
This Sausage & Ranch Tater Tot Breakfast Casserole is very easy to make. Just cook the sausage, mix with Ranch dressing, toss in the cheese and tater tots. Finally, whisk together the eggs and milk and pour over tater tots. That’s it!
I get a lot of questions about what type of sausage to use in my breakfast casseroles. I use two rolls of breakfast sausage such as Jimmy Dean sausage. Either regular or hot sausage is fine.
Another question I get about tater tot casseroles is if you need to thaw the tater tots before adding to the casserole dish. I don’t thaw the tater tots before adding them to the casserole dish. I just toss them in the casserole dish frozen and they turn out perfectly.
Can You Freeze Tater Tot Breakfast Casserole?
Absolutely! You can make this casserole ahead of time and refrigerate overnight or freeze unbaked for later. You could even split the recipe into two pans and bake one now and freeze one for later.
If baking after refrigerating overnight, you may need to add a few minutes to the cooking time. If baking after freezing, thaw completely and bake as directed below.

Sausage and Ranch Tater Tot Breakfast Casserole
Ingredients:
- 2 lb hot breakfast sausage
- 1 (30-32-oz) bag frozen tater tots
- 1½ cups Ranch dressing
- 2 cups shredded cheddar cheese
- 8 eggs
- 2 cups milk
Instructions:
- Preheat oven to 350ºF.
- In a large skillet, cook sausage until no longer pink. Drain fat.
- In a large bowl, combine cooked sausage and ranch dressing. Add tater tots and cheese. Stir. Pour into a lightly greased 9×13-inch pan.
- Whisk together eggs and milk. Pour over tater tot mixture.
- **Cover and refrigerate or freeze at this point if baking later.**
- Bake uncovered for 60 – 70 minutes, or until eggs are set.
Notes:
If baking after freezing, thaw completely and bake as directed above.

Made this tonight and it was so easy and delish! Replaced the ranch dressing with a block of cream cheese and a packet of ranch mix and it was so good.
I made this tonight for dinner. I did not have any sausage so I left it out. I made half of the recipe. It was very yummy. Thank you for the recipe. I definitely will make it again soon.
