Baked Chicken Quesadilla

This Sheet Pan Quesadilla has quickly become one of our favorite Mexican recipes! Chicken, cheese, black beans, sour cream, tomatoes, and taco seasoning baked in tortillas until crispy and melty. This is easy to make and full of great flavor. This makes a great weeknight meal for the family! I’m never making regular quesadillas again!

How to Make Sheet Pan Quesadilla

This dish is super easy to make with only a few simple ingredients. Brush a half sheet pan with melted butter. Arrange six large flour tortillas, overhanging the edges of the baking sheet. Place one tortilla in the center. In a large bowl, stir together cooked chopped chicken, shredded cheese, sour cream, black beans, taco seasoning, Rotel diced tomatoes and green chiles, and lime juice. Season with salt and black pepper.

Spread the chicken mixture over the tortillas. Place one tortilla on top of the center of the filling. Fold overhanging tortillas to the center. Brush the tops of the tortillas with melted butter. Top tortillas with a baking sheet. Bake in a preheated oven for 20 minutes. Remove the extra baking pan, and bake for 15 minutes, until the tortillas are crispy and the filling is hot and melty. Cut the quesadilla into squares and top with your favorite toppings.

Sheet Pan Quesadilla

Sheet Pan Quesadilla Recipe – giant quesadilla stuffed with chicken, black beans, Rotel, sour cream, taco seasoning, Rotel tomatoes, lime juice, and lots of gooey cheese! This is easy to make and full of great flavor. This is the perfect party food to feed a crowd and a delicious weeknight dinner the whole family will enjoy!

Ingredients:

  • 8 burrito-size flour tortillas
  • 3 tbsp melted butter divided
  • 3 cups cooked chopped chicken
  • 1 cup sour cream
  • 1 (15-oz) can black beans, drained and rinsed
  • 3 cups shredded cheddar cheese
  • 1 (1-oz) package taco seasoning
  • 1 lime, juiced
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, drained

Instructions:

  • Preheat oven to 450ºF. Brush a half-sheet pan with 1 ½ Tablespoons of melted butter.
  • Place 6 flour tortillas around the edges of the sheet pan, with the tortillas hanging halfway over the edge of the pan, leaving a gap in the center. Place 1 tortilla in the bottom center gap.
  • In a large bowl, stir together cooked chicken, sour cream, black beans, shredded cheese, taco seasoning, lime juice, and Rotel diced tomatoes and green chiles.
  • Evenly spread the chicken mixture over the tortillas.
  • Place the last tortilla in the center of the mixture. Carefully begin folding the tortillas that are hanging over the edge of the pan, towards the middle. Brush with remaining melted butter. Place a second sheet pan on top of the folded tortillas and press down a bit.
  • Transfer the stacked baking sheets to the oven and bake for 20 minutes. Remove the top baking sheet and bake for 15 more minutes, or until the tortillas are lightly golden.
  • Remove the sheet pan from the oven and allow the quesadilla to slightly cool before cutting it into servings.

  2. These were delicious! Such a great idea for a family serving. I made it for a Cinco de Mayo party. Did a few different things, used a chicken taco packet, 2 cups of queso cheese and 1 taco cheese blend, and added sautéed onions. I premixed the ingredients, to let the flavors mix and then it put it together. It was a hit at the party.. Thank you!

    1. Great question! I have only made the recipe as written, so I cannot answer with certainty. I do know that Mission makes gluten-free flour tortillas. As always, please use your best judgment regarding substitutions and modifications.

    1. A couple of 9×13 pans? It will also work fine without a pan on top. It just might not get as crispy on top. You could pop it under the broiler for a minute after cooking.
