How to Make Sheet Pan Quesadilla

This dish is super easy to make with only a few simple ingredients. Brush a half sheet pan with melted butter. Arrange six large flour tortillas, overhanging the edges of the baking sheet. Place one tortilla in the center. In a large bowl, stir together cooked chopped chicken, shredded cheese, sour cream, black beans, taco seasoning, Rotel diced tomatoes and green chiles, and lime juice. Season with salt and black pepper.

Spread the chicken mixture over the tortillas. Place one tortilla on top of the center of the filling. Fold overhanging tortillas to the center. Brush the tops of the tortillas with melted butter. Top tortillas with a baking sheet. Bake in a preheated oven for 20 minutes. Remove the extra baking pan, and bake for 15 minutes, until the tortillas are crispy and the filling is hot and melty. Cut the quesadilla into squares and top with your favorite toppings.

    1. Great question! I have only made the recipe as written, so I cannot answer with certainty. I do know that Mission makes gluten-free flour tortillas. As always, please use your best judgment regarding substitutions and modifications.

    1. A couple of 9×13 pans? It will also work fine without a pan on top. It just might not get as crispy on top. You could pop it under the broiler for a minute after cooking.

  1. What a fantastic idea! I will be making this for my big family dinners along with sheet pan fajitas! Thank you for this recipe!

  2. This is the best idea for a meal I’ve seen all through December. It’s one of those “why didn’t I think of that” moments. Thanks, absolutely brilliant. Hope you had a lovely Christmas with those beautiful cats of yours and I hope you have a very happy New Year.
