Skillet Lasagna

This was fabulous!  Cheesy and delicious!  I love lasagna, but it isn’t really an option for a weeknight.  This quick pasta dish has all the flavors of lasagna and only takes minutes to prepare.  I took a shortcut and browned my meat ahead of time.  I like to prep all my meats on the weekend and freeze them for easy weeknight meals!  I used ricotta cheese in this skillet lasagna.  If you don’t like ricotta, you can use cottage cheese.   If you don’t like ricotta or cottage cheese, try some sour cream or Greek yogurt.  We both really enjoyed this.  Serve this with a side salad and some garlic bread for a quick Italian feast!  I had the leftovers for lunch the next day and it was great (almost better).

Skillet Lasagna

8 oz bowtie pasta
1/2 lb sausage
1/2 lb lean ground beef
1 tsp minced garlic
1 tsp dried basil
1 (24oz) jar spaghetti sauce
1 cup shredded mozzarella cheese

 2/3 cup ricotta cheese

Cook noodles according to package directions. Drain.  Set aside.

In a large skillet, brown sausage and ground beef.  Drain fat and return meat to skillet.  Add mined garlic and cook until fragrant, about 30 seconds.  Add spaghetti sauce, basil, mozzarella cheese and ricotta to the meat.  Stir to combine.  Add noodles and stir to coat thoroughly.  Simmer about 10 minutes, stirring occasionally.  Top with additional cheese if desired.

  2. My husband and I enjoyed this, but my 11 year old LOVED it. He devoured his dinner the first night, and almost did a happy dance when I told him we were having it again as leftovers. He begged me "Please, please, please make this again soon." I did accidentally use a whole pound of ground beef, so I'm sure he liked that, too. I'm sure we'll be having this again…

  3. Cardio Queen – I brown the meat and put it in a ziplock bag. I freeze the ziplock bag and either put it in the fridge the morning I am making the dish or just throw the meat in the pan frozen. It doesn't take long to thaw out.

  5. When you cook your meats ahead of time and freeze them, what do you recommend as the best way to thaw them before using them in a recipe? Also, do you just freeze them in zip-loc bags or tupperware? Sorry for the third degree, I'm just amazed by this wonderful weekly time saver! 🙂 P.s. I love your blog and your recipes! We eat 1-2 of yours every week!

  7. I make a pie plate lasagna by putting a little sauce in the bottom, precooked WW noodles on that, lowfat cottage cheese, sauce, then mozz and parm
