This Sloppy Joe Cornbread Bake is a weeknight staple at our house. It is crazy good!! We could not stop eating this yummy casserole. Sweet cornbread topped with sloppy joe meat and cheese. I mean, what’s not to love? I’m not even a big fan of sloppy joes and I gobbled this up! We ate this for dinner and finished off the leftovers for lunch.
How to Make Sloppy Joe Cornbread Casserole
This casserole is SUPER easy to make. Start with making the cornbread base. Mix together Jiffy mix cornbread, creamed corn, eggs, milk, and a little cheese. Pop that in the oven to partially bake and prepare the sloppy joe meat. I browned some ground beef and used a can of Manwich sloppy joe sauce. Remove the cornbread from the oven. Top with the sloppy joe meat and cheese. Place the pan back in the oven and bake until the cornbread is done.
You can assemble this casserole up to the point of spreading the sloppy joe meat on the partially baked cornbread and freeze it for later. To bake the casserole after freezing, thaw completely and bake at 400ºF for about 30 minutes until the cornbread is fully baked. Freezer meals are such a timesaver!
You can also freeze any leftovers for a quick meal later. To reheat leftovers, thaw completely and heat until warm in the microwave or oven.

Sloppy Joe Cornbread Bake
Equipment:
Ingredients:
- 1 (8.5oz) pkg cornbread mix
- 1 (14.75-oz) can creamed corn
- 2 eggs
- ½ cup milk
- 2 cups shredded cheddar cheese, divided
- 1½ lb ground beef
- 1 (15-oz) can Manwich sloppy joe sauce
Instructions:
- Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
- In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
- In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add sloppy joe sauce. Cook for an additional 5 minutes.
- Spread beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
- Allow to cool for 5 to 10 minutes and cut into squares.

Is there a substitute for the milk in the corn bread. My son can not have dairy.

This is a fined tuned version of what I used to make my kids years ago (their loss lol) Just made it! So good!! I added chopped onion to the beef and cooked it in the microwave in a colander so the grease automatically drained into the bowl it was in. Genius adding creamed corn to the corn bread mix. I did add chives and a diced up Serrano pepper to the cornbread mix. We like spicy!
I baked the cornbread for about 24 minutes to get it nice and browned and about 10 minutes to melt the cheese on top. My oven temp may be a little off. Otherwise I followed the recipe as written.
This is a keeper! I think we may prefer this to regular sloppy joe’s on buns.

I would like to make this the night before. Can you assemble it completely and place in rifrigerator?
You would need to prepare the dish through step 3 and top the cornbread with the sloppy joe mixture then refrigerate it. You may need to add a few minutes to the remaining cooking time.
I made the recipe exactly as written. So good and quick to make! It would also be delicious made with thick chili and a small can of medium peppers added to the cornbread. Then top with hotdogs! Chili Cheese Corn dogs!

This was delicious. I added buttermilk and 8oz of Velveeta for the cornbread mixture, cutting it into chunks on top of the mixture. Once the sloppy joe mixture was added to the pan I put more Velveeta on top. At the end of the second 20-minute cook time, I swirled the Velveeta into the meat mixture.
We loved this! I made the recipe exactly as written. Divided it in half, prepared one pan through step 4, and put in the freezer for our daughter who is having a baby in a couple of weeks. I’ll be looking on the site for more freezer friendly recipes to make life easier for the new mama.
