Slow Cooker Apple-Pecan Sweet Potatoes Recipe
I’m sharing another great Thanksgiving side dish today. Chicken Legs loves sweet potatoes, but I never make them at home. I decided I needed to fix this oversight ASAP! These Apple-Pecan Sweet Potatoes are delicious and so easy to make.
The sweet potatoes cook all day in the slow cooker in some chicken broth. When you are ready to serve them, drain the potatoes and add the remaining ingredients and mix with a handheld mixer right in the slow cooker. So easy! This recipe is great for Thanksgiving. No worrying about the timing of getting the sweet potatoes done with the rest of the food. Just keep the cooked potatoes on warm until you are ready to serve!
Slow Cooker Apple-Pecan Sweet Potatoes
ingredients:

4 large sweet potatoes, peel and cut into 1-1/2-inch cubes

1 large Granny Smith apple, peel and chopped

1 (14-oz) can chicken broth

½ cup whipping cream

¼ cup firmly packed light brown sugar

2 Tbsp butter
-
½ tsp salt
-
¾ tsp ground cinnamon
- ¾ cup chopped toasted pecans
instructions:

Place sweet potatoes, apple and chicken broth in 6qt slow cooker. Cover and cook on LOW for 8 hours.

Drain potatoes and apple. Return to slow cooker.
- Add whipping cream, brown sugar, butter, salt and cinnamon. Beat at medium speed with an electric handheld mixer until smooth and blended. Stir in pecan.

Can I use a Gala apple instead of Granny Smith?
You can use any apple that you want.

I'm surprised that this recipe calls for chicken broth, how does that 'fit'?
Not sure what you mean. The potatoes and apple cook in the broth.
Is the whipping cream necessary? I do not want dairy in my dish!
You can certainly make this anyway you choose! Most mashed potato recipes have milk or cream and butter in them.
Okay, here's a tip to make sure sweet potatoes are perfect every time. When you are using the hand-held mixer, pull it out several times and rinse the strings from the beaters. You won't lose much sweet potato but they will be super creamy with no strings!
