I am a big fan of slow cooker soups. They are such a life-saver during the week. I usually dump all the ingredients in the slow cooker insert the night before and keep it in the fridge overnight. I put the insert in the slow cooker first thing in the morning and dinner is done! It’s like magic! This Bacon Cheeseburger Soup has been on repeat at our house. As I said, this soup is super easy to make. Simply dump all the ingredients in the crockpot and cook. That is it! This soup is super delicious. This is a hearty soup with loaded with hash brown potatoes and lots of cheese, beef, and bacon. This is a thick soup. Feel free to add more chicken broth before serving to get it to your desired consistency.
If you want to reduce the calories in this soup, use ground turkey, turkey bacon, and low-fat Velveeta cheese. I also suggest low-sodium chicken broth to make sure the soup isn’t too salty.
