Creamy Buffalo Chicken Chili with Chicken Breast

This Slow Cooker Buffalo Crack Chicken Chili has been on repeat in our house lately. Loaded with chicken, chili beans, black beans, diced tomatoes and green chilies, cream cheese, cumin, chili powder, chicken broth, buffalo hot sauce, and ranch. It is lick-the-bowl-delicious. This is super easy to make; simply dump everything in the slow cooker and close the lid. It literally takes about 5 minutes to prepare. High five for easy meals!

How to Make Slow Cooker Buffalo Chicken Chili

This chili is effortless to make in the crockpot with only a few simple ingredients. To make the chili, place some boneless chicken breasts in the slow cooker. Add chili beans, black beans, Rotel diced tomatoes and green chiles, cream cheese, ground cumin, chili powder, chicken broth, buffalo hot sauce, and ranch dressing mix. Cover the slow cooker and cook on LOW for about 6 hours. Remove the chicken breasts from the crock pot and shred them with 2 forks. Add the shredded chicken to the slow cooker and stir. Garnish with green onions and/or cilantro.

  • I use chicken breasts in the chili.
    • You can substitute boneless chicken tenderloins or chicken thighs if you prefer.
    • Cooked ground chicken also works fine.
  • I use Frank’s Red Hot Sauce or Frank’s Buffalo Sauce in this recipe.

    • For a low-carb soup, omit the beans.
  • Can substitute a can of fire-roasted tomatoes for the Rotel. 
  • Feel free to add more veggies to the chili. Peppers, onion, carrots, celery, diced potatoes, and corn are all great.
  • If you have clumps of cream cheese in the finished soup, use a whisk to help get it fully incorporated into the soup.
  • Can I cook the chili on HIGH? Yes! You can cook the chili on HIGH for 3 to 4 hours.
  • Can I make Buffalo Chicken Chili on the stove top? Yes! Add all the ingredients to a Dutch oven or large pot and cook on medium heat until the chicken is done.
    • Use chopped rotisserie chicken instead of raw chicken breasts to reduce cooking time. Add all the ingredients to a Dutch oven, boil, and simmer for 20 minutes.
  • Store any leftovers in an airtight container in the refrigerator.
  • Can I freeze Chicken Chili? Yes! Let the soup cool completely and place in plastic freezer bags and freeze. To reheat, thaw and reheat on the stovetop or in the microwave. You may need to add a little chicken broth if the chili is too thick.

This has quickly become one of our favorite chili recipes. The flavor is amazing. We just can’t get enough of it. If you like buffalo wings and buffalo chicken dip, you are going to love this buffalo chicken chili recipe.  

We like to top the chili with some sour cream and cheddar cheese. It is also delicious with some blue cheese crumbles, celery, sliced avocado, and crumbled tortilla chips. This is a very hearty chili, so you don’t need much to go with it. We usually just have the chili with some cornbread or a salad.

Ingredients:

Instructions:

  • Place chicken at bottom of slow cooker.
  • Add chili beans, black beans, Rotel diced tomatoes and green chilies, chicken broth, cumin, chili powder, ranch seasoning, and buffalo sauce. Stir together. Place cream cheese on top of the chicken.
  • Cover with lid and cook on LOW for 6-8 hours.
  • Remove chicken from slow cooker and shred with 2 forks. Return to slow cooker and stir.

  1. This chili is so good. Have you ever made it with Rotisserie chicken in the crockpot? If so, how much chopped rotisserie chicken did you use? Did you put it in the crockpot the same time as everything else or wait awhile before adding it?

    I came across a new recipe that you posted……it is also a buffalo chicken chili but made with ground chicken. I have never used ground chicken before. I may just have to tryout the recipe. Thanks for sharing recipes with all of us. 🙂

  3. LOL I had to do the cream cheese hunt, too! Went to three stores yesterday before I found it at an international food market in the neighborhood. I just now put the ingredients together, along with a diced red bell pepper I saw at the market, and all are in the slow cooker. Now I wish I had some blue cheese crumbles to serve with it after its cooked-but the grocery stores will be crazy today since we’re expecting a little snow here in Atlanta tomorrow.
