Slow Cooker Cheddar Corn
Equipment:
Ingredients:
- 1 (16-oz) package frozen corn
- 1 (12-oz) package frozen corn
- 1 (8-oz) package cream cheese
- 1 cup shredded cheddar cheese
- ¼ cup butter
- ¼ cup heavy cream
- ½ tsp salt
- ¼ tsp pepper
Instructions:
- Combine all ingredients in the slow cooker. Cover and cook on LOW for 3-½ to 4 hours. Stir before serving. (I also like to stir the mixture half way through cooking)

I notice you put down 16oz frozen corn then 12oz frozen corn…do I get a bag of 16oz and a bag of 12oz and put altogether?

I’ve made this twice, and it’s so good! I add onions, jalapeños and bacon, but the mixture is so good!
I was cutting this in half but when making it at the last moment I realized I did not have cream cheese on hand. I was determined to make it that day so substituted a container of herb and garlic boursin cheese I had on hand. It was just a bit over the suggested amount of cream cheese. It turned out very good but I can’t compare to what it would have been with regular cream cheese. I also used mostly sweet white corn with a bit of the yellow/white for the rest.

I’m thinking of trying this recipe quadrupled for an electric roasted for a big crowd. As long as I have it on low and keep an eye on it it, shouldn’t it work out the same as a slow cooker?

You should be able to use canned corn. It just might not take as long to cook.

I doubled the recipe ant it worked out perfect. I also added some chopped up bacon to the mixture at the end and browned some panko bread crumbs in butter and spread the browned breadcrumbs on top when i served it.

It surprised me that you use 1-12 oz pkg frozen corn and 1-20 oz pkg of frozen corn so that would be 32 oz of frozen corn. Is this a typo or is that correct? I love corn and want to make this right away! Thanks

I haven’t doubled this recipe but it should be fine. You might just need to increase the cooking time a little. Maybe add an extra hour

Can you tell me what type of corn you used. Was it kernel corn in the bag or the cream corn that comes in the tubes? I recently made a corn casserole recipe from another site and it was really dry. On looking back, I think I used a different type of corn than they did because theirs looked creamy and delicious. Thanks in advance!
I used frozen kernels, not the creamed corn in the tube. I like to buy the Silver Queen Corn Kernels, if you can't find the Silver Queen regular yellow kernels are fine.

could this stay on low for more time? for me, crockpot foods are only convenient for work days, and I'm gone for almost 10 hours. would this be ok sitting for that long?
I do think it would be fine. My slow cooker will switch to warm after you set the time.
