Slow Cooker Chicken Chili Tacos – Mexican chicken with chili beans
My Mom emailed me this recipe. She found it somewhere and thought it sounded like something we would like. She was right. It tasted great and only has 3 ingredients. I am always up for a slow cooker meal. This recipe couldn’t be simpler. Dump the chicken, beans and salsa in the slow cooker and let it do its thing all day. We served the chicken in the awesome stand and stuff tortilla bowls. The chicken would also be great in regular taco shells, soft taco shells or on top of chips for chicken nachos. This makes a lot. I ate this a couple of days for lunch and it tasted great. I am already planning on making it again! Definitely give this a try!!
Slow Cooker Chicken Chili Tacos
- 2 lb boneless chicken breasts
- 1 (15oz) can chili beans, undrained
- ½ cup salsa
- taco toppings
Place chicken, chili beans and salsa in slow cooker. Cook on LOW for 4-6 hours. Remove chicken from slow cooker. Shred chicken and place back into slow cooker.
Top tortillas with chicken mixture and your favorite taco toppings.
